In this study, resveratrol emulsion was constructed using peanut protein isolate hydrolysate (HPPI) and dextran (Dex) conjugate (HPPI-Dex) as carriers. The interfacial properties of HPPI-Dex and the stability and digestion characteristics of the emulsion were investigated. Mixed starting cultures have been reported to perform better than commonly used single Lactic acid bacteria in meat fermentation. Lactobacillus curvatus SQ-425 and Staphylococcus simulans 65-4 were screened from 67 sausages collected from southwest regions in China to investigate the effects of single and combined inoculation (SF and CMF) on sausages quality, while natural fermentation (NF) was used as a control group. Inoculation of mixed cultures resulted in a continuous decrease in pH during fermentation, an increase in redness values of sausages and the highest sensory score.

This study investigates the impact of catalase (CAT) on the rheological properties of wheat gluten by analyzing CAT-induced structural changes in gluten proteins to uncover the mechanisms behind these modifications. The results showed that CAT significantly enhanced the storage modulus (G') and loss modulus (G″) of gluten while reducing creep strain and recovery strain. The most pronounced effects were observed with the addition of 250 U/g CAT for 30 min.

Melatonin is widely observed in the female reproductive system and regulates trophoblast cell functions, but its effects on embryo implantation and underlying mechanisms are not well understood. By constructing an in vitro embryo culture model, we found that melatonin enhances migration and implantation in human and mouse trophoblast cells. It also significantly promoted HTR-8/SVneo cell proliferation, inhibited apoptosis, enhanced migration, and mitigated oxidative damage.
