The effects of wheat bran dietary fiber (WBDF) treated by air flow micro-pulverization on gelatinization, thermal, rheological, structural properties, and in vitro digestion of wheat starch (WS) were investigated. Different particle sizes of WBDF were obtained by conventional knife grinding and airflow micro-grinding. Compared with conventional knife grinding, the particle size of WBDF treated by air flow micro-pulverization decreased, the particle size distribution was concentrated at small particle sizes, the specific surface area increased, and the hydraulic and oil-holding power decreased, which was mainly related to the change of WBDF spatial structure and the increase of solubility.

Dough fermentation is an effective method for selenium conversion. This study investigated the effects of low NaSeO concentrations on the morphology, texture, fermentation properties, Se species, Se bioaccessibility, and antioxidant capacity of two types of yeast-leaved steamed bread. The results indicated that NaSeO did not significantly affect the specific volume; but it did result in increased hardness.

The CRISPR/Cas9 gene-editing technology, derived from the adaptive immune mechanisms of bacteria, has demonstrated remarkable advantages in fields such as gene function research and the treatment of genetic diseases due to its simplicity in design, precise targeting, and ease of use. Despite challenges such as off-target effects and cytotoxicity, effective spatiotemporal control strategies have been achieved for the CRISPR/Cas9 system through precise regulation of Cas9 protein activity as well as engineering of guide RNAs (gRNAs). This review provides a comprehensive analysis of the core components and functional mechanisms underlying the CRISPR/Cas9 system, highlights recent advancements in spatiotemporal control strategies, and discusses future directions for development.

Parrotfish are a common fish in coral reef areas, but little is known about their gut microbial communities. In addition, parrotfish are capable of sex reversal, usually some males are sexually reversed from females, and it is still not known whether this sex reversal leads to significant changes in gut microbial communities. In this study, we investigated the gut microbial communities of three species of parrotfish including Scarus forsteni (4 females and 4 sex-reversed males), Scarus ghobban (5 females and 5 sex-reversed males), and Hipposcarus longiceps (5 females and 5 sex-reversed males) by using high-throughput sequencing technology.

Cellulose was extracted from rice straw waste by the intergrated technique of CHOH/HO, dilute alkali treatment and HO bleaching process, and rice straw-derived cellulose acetate was obtained by the acetylation reaction of cellulose. Herein, this study reports the development of a multifunctional conductive antibacterial cotton fabric through the utilization of the natural polyphenol-mediated silver mirror reaction. The experimental results demonstrate that polyphenols can effectively facilitate the deposition of silver nanoparticles (AgNPs), resulting in a uniform and durable hybrid nanocoating on the cotton fabric. The effects of polyphenol's molecular weights on the coating structures and stabilities have been revealed via two distinct approaches: washing resistance and electrochemical testing systems.
