Food fortification is an effective strategy to combat vitamin A deficiency. Gari, a cassava-based West African food product, is an interesting product to fortify with vitamin A, but the low stability of vitamin A poses a challenge. We showed that toasted wheat bran can stabilise vitamin A as retinyl palmitate (RP) during storage of RP-fortified gari to a limited extent.

Vitamin A deficiency (VAD) and iron deficiency anemia coexist around the world, particularly in children and women of reproductive age in low- and middle-income countries. Within this scenario, there is a known interaction between vitamin A and iron, and it has been postulated that lack of vitamin A impairs iron metabolism, leading to vitamin A deficiency anemia (VADA). Current animal, epidemiological, and clinical studies support this notion.

Purpose: This study examined the status and determinants of key micronutrients among 24-60 month children in underprivileged provinces of Iran, highlighting ongoing challenges despite intervention efforts.
Methods: This study analyzed data from the National Food and Nutrition Surveillance program. A multistage cluster sampling method was used, recruiting 280 children per province from Khuzestan, Kerman, Ilam, Bushehr, Hormozgan, Kohgiluyeh va Boyerahmad, Sistan va Baluchestan and South Khorasan.

The presentation of vitamin A deficiency (VAD)-induced ocular complications can be challenging to diagnose in elderly patients, particularly due to the overlap with age-related macular degeneration (AMD) symptoms. This case report details the presentation, diagnosis, and management of an 88-year-old female with vision loss, highlighting the ocular manifestations of presumed VAD. Despite vitamin A levels being at the lower end of the normal range, the patient's symptoms and spectral domain optical coherence tomography (SD-OCT) findings suggested insufficient levels, leading to thinning of the outer nuclear layer.
