A subtype of soft solid-like substances are emulsion gels (emulgels; EGs). These composite material's structures either consist of a network of aggregated emulsion droplets or a polymeric gel matrix that contains emulsion droplets. The product's rheological signature can be used to determine how effective it is for a specific application.

Marine fish may become contaminated as a result of environmental pollution including hazardous metals. Due to the presence of metalloids and toxic metals such as cadmium, lead, copper, and zinc in fish tissue, it may endanger health, considering the countless benefits of consuming fish, which can harm the human body if consumed in toxic amounts. Therefore, it is vital to monitor the concentration of metals in fish meat to ensure compliance with food safety regulations and protect the consumer.

Although bread is the main consumed staple food worldwide containing essential micro- and macronutrients, incorporation of probiotics (PRO) into this nondairy product has been less documented. Due to the mechanical and thermal stresses during bread-making process, production of PRO bread (PRO-BR) is dependent on development of emerging strategies like edible coating, encapsulation, three-dimensional printing, and application of thermophilic PRO strains. In the present study, novel technological and formulation aspects of PRO-BR, as well as critical conditions for obtaining products with guaranteed PRO potential have been reviewed.

The demand for copper is growing considerably in parallel with economic and technological development. The rate increase in copper consumption in Iran increases pressure on the numerous unexploited mines in southeast Iran and causes the environmental crisis alongside the northern Levar wind in this area. Given this, this study systematically explored the environmental impacts of a one-ton copper cathode processing operation from a cradle-to-gate perspective, using life cycle assessment (LCA).

Increasing demand for safe, efficient, and eco-friendly solutions for pharmaceutical and food industries has led researchers to explore new approaches to bacterial storage. Several advantages make electrospinning (ES) a promising technique for food systems, including simple manufacturing equipment, a relatively low spinning cost, a wide variety of spinnable materials, and a mild process that is easily controlled, which allows continuous fabrication of ultrafine polymeric fibers at submicron or nanoscales without high temperatures or high pressures. This review briefly describes recent advances in the development of electrospun fibers for loading probiotics (PRB) by focusing on ES technology, its efficiency for loading PRB into fibers (viability, digestive stability, growth rate, release, thermal stability, and interactions of fibers with PRB), and the application of PRB-loaded fibers as active packaging (spoilage/microbial control, antioxidant effect, shelf life).

Notwithstanding the substantial progress in optical wearable sensing devices, developing wearable optical sensors for simultaneous, real-time, and continuous monitoring of multiple biomarkers is still an important, yet unmet, demand. Aiming to address this need, we introduced for the first time a smart wearable optical sensor (SWOS) platform combining a multiplexed sweat sensor sticker with its IoT-enabled readout module. We employed our SWOS system for on-body continuous, real-time, and simultaneous fluorimetric monitoring of sweat volume (physical parameter) and pH (chemical marker).

In this study, the magnetic photocatalyst Scendesmus/FeO/TiO was synthesized, and its sonophotocatalytic properties in relation to the degradation of the Red195 dye were evaluated. Particles were characterized using a scanning electron microscope (SEM), Fourier's transform infrared spectroscopy (FTIR), X-ray powder diffraction (XRD), and a vibrating-sample magnetometer (VSM). At a pH of 5, a photocatalyst dosage of 100 mg, an initial R195 concentration of 100 mg/l, an ultrasound power of 38W, and an exposure time of 20 min, the maximum Red195 removal efficiency (100%) was achieved.

Flavors are considered among the most important components of food formulations since they can predominantly affect the consumer acceptance and satisfaction. However, most flavors are highly volatile and inherently sensitive to pH, light, thermal processes, and chemical reactions such as oxidation and hydrolysis. Encapsulation is used as an effective strategy for protecting flavors from environmental conditions and extending their shelf life.

The need for clear and straightforward guidelines for carbon footprint (CFP) and energy footprint (EFP) evaluations is critical due to the non-transparent and misleading results that have been reported. This study aims to address this gap by integrating CFP, EFP, toxicity, and economic assessments to evaluate the eco-environmental impacts of wastewater treatment plants (WWTPs). The results indicate that the total CFP was below 0.

Pushed by the environmental pollution and health hazards of plastic packaging, the development of biodegradable food packaging films (FPFs) is a necessary and sustainable trend for social development. Most protein molecules have excellent film-forming properties as natural polymer matrices, and the assembled films have excellent barrier properties, but show defects such as low water resistance and poor mechanical properties. In order to improve the performance of protein-based films, transglutaminase (TG) is used as a safe and green cross-linking (CL) agent.

Although fat is one of the indispensable components of food flavor, excessive fat consumption could cause obesity, metabolism syndromes and an imbalance in the intestinal flora. In the pursuit of a healthy diet, designing fat reducing foods by inhibiting lipid digestion and calorie intake is a promising strategy. Altering the gastric emptying rates of lipids as well as acting on the lipase by suppressing the enzymatic activity or limiting lipase diffusion via interfacial modulation can effectively decrease lipolysis rates.

The interconnected hierarchically porous structures are of key importance for potential applications as substrates for drug delivery, cell culture, and bioscaffolds, ensuring cell adhesion and sufficient diffusion of metabolites and nutrients. Here, encapsulation of a vitamin C-loaded gel-like double emulsion using a hydrophobic emulsifier and soy particles was performed to develop a bioactive bioink for 3D printing of highly porous scaffolds with enhanced cell biocompatibility. The produced double emulsions suggested a mechanical strength with the range of elastic moduli of soft tissues possessing a thixotropic feature and recoverable matrix.
