Knowing the concentration levels of phenolic compounds and anthocyanins in grape berries plays a key role, as these compounds significantly contribute to the nutritional value and quality of grapes, affecting both health benefits and grape quality. The current study was conducted to investigate how different tillage (disc harrow, chisel, no tillage) and organic fertilizer (Antep radish and broccoli chopped residue, olive blackwater) treatments affect the concentration of these valuable compounds in Royal grape berries over three consecutive years (2020-2022), providing insights into optimal agricultural practices for enhancing grape quality. Our results documented significant variations in phenolic and anthocyanin concentrations across different soil tillage, organic fertilizer treatments and years.

This study aims to evaluate homogenization techniques and conditions for producing stable, small droplet-size water-in-oil (W/O) emulsions intended for incorporation into casein hydrolysate-loaded double emulsions. Three commonly used homogenization methods; rotor-stator, ultrasonic, and high-pressure homogenization were individually optimized utilizing response surface methodology. Instances of over-processing were observed, particularly with the rotor-stator and ultrasonic homogenizers under specific conditions.

This study aimed at investigating the quality attributes of Turkish fermented sausage (sucuk) incorporated with bay leaf extract obtained as a natural antioxidant and a source of phytochemicals. Five different bay leaf extracts were obtained with distilled water and 60%, 70%, 80%, and 90% ethanol. The total phenolic contents and antioxidant activity values indicated that ultrasound-assisted 70% ethanol extract was the most suitable extract.

This study aimed to investigate the chemical, physical, textural, and sensory properties of the squid () muscle during different tenderization agents (yeast, milk, and mineral water) and times (3, 6, 12, and 24 h). The results of the analyses showed that different treatments and their durations affected the dry matter, ash, lipid, and crude protein content of the squid. According to sodium dodecyl sulfate-polyacrylamide gel electrophoresis results, it was observed that there was a slight decrease in band intensities based on different treatments and their durations.
