Edible bird's nest (EBN) is a functional food renowned for its numerous health benefits. While its nutritional and therapeutic value is well-documented, the metabolites contributing to the bioactivities of EBN remain poorly understood. This study aimed to identify the metabolites present in EBN subjected to different treatments, including double-boiled EBN (EBN), EBN hydrolysate (EBN), EBN fermented with Lactobacillus helveticus (EBN), Latilactobacillus curvatus (EBN), and Latilactobacillus sakei (EBN) using liquid chromatography-mass spectrometry (LC-MS) and correlate the identified bioactive metabolites with the bioactivities of EBN.

Neoterically, food packaging systems designed solely for prolonging shelf life or monitoring freshness could not fulfil the dynamic demands of consumers. In this current investigation, using the solvent casting method, a versatile halochromic indicator was created by integrating black currant anthocyanin and cinnamon essential oil-loaded Pickering emulsion into a starch/gelatin matrix. The resulting indicator film underwent scrutiny for its structural, pH-sensitive, antioxidant, and antimicrobial attributes.

Nanocellulose (CNF) has emerged as a promising alternative to synthetic petroleum-based polymers, but the conventional preparation process involves multiple tedious steps, heavily dependent on chemical input, and proves cost-inefficient. This study presented an, in situ ultrasound-assisted extraction using deep eutectic solvent (DES) based on choline chloride and oxalic acid for more facile production of CNF from raw durian husk fibers. FESEM analysis confirmed the successful extraction of web-like nanofibril structure with width size ranging from 18 to 26 nm.

Edible bird's nest (EBN) is made up of sialylated-mucin glycoprotein with various health benefits due to its high antioxidative activity. However, as a macromolecule with distinct charged sialic acid and amino acids, fractions with different charges would have varied physicochemical properties and antioxidant activity, which have not been studied. Therefore, this study aimed to fractionate and purify the enzymatic hydrolysed of cleaned EBN (EBNh) and EBN by-product (EBNh) through anion exchange chromatography (AEC), and determine their molecular weights, physicochemical properties, and antioxidative activities.

Brain oedema or tissue swelling that develops after ischaemic stroke can cause detrimental effects, including brain herniation and increased intracranial pressure (ICP). These effects can be reduced by performing a decompressive craniectomy (DC) operation, in which a portion of the skull is removed to allow swollen brain tissue to expand outside the skull. In this study, a poroelastic model is used to investigate the effect of brain ischaemic infarct size and location on the severity of brain tissue swelling.
