The present study used gas chromatography-mass spectrometry (GC-MS) and gas chromatography-ion mobility spectrometry (GC-IMS) to separate and identify the characteristic volatile flavor substances in 30 roasted peanut samples. GC-MS identified 59 volatile compounds, and GC-IMS detected 61 volatile flavor substances. The 30 peanut varieties were then divided into four groups on the basis of their volatile flavor substances using principal component analysis (PCA), and a fingerprint profile of the varieties' volatile characteristics was established from information peaks identified in the spectra.

Cyanidin-3-galactoside (C3G), the most abundant anthocyanin in a, has many beneficial health effects, such as antioxidation. C3G was extracted from and applied (100, 200, and 400 mg/kg body weight) to 50-μl silica particles (SP) solution-exposed mice to research its antifibrotic properties using histological analysis, hydroxyproline assay, quantitative real-time polymerase chain reaction, and western blot analysis. The results showed that C3G treatment significantly ameliorated pulmonary fibrosis and cell infiltration into the lungs of mice.

The effects of 10%-30% of wheat flour substitution with potato flour (PF) and sweet potato flour (SPF) on the flour and dough properties, the total polyphenol (TPC), and carotenoid contents (TCC) of bread, as well as their correlation with bread texture and starch digestibility, were investigated. With PF and SPF addition, the peak, breakdown, and setback viscosity of the flour decreased. The addition of PF and SPF reduced the dough formation and stabilization duration, as well as the hardness of the bread.
