In this study, nine isonitrogenous experimental diets containing graded level of carbohydrates (40 g/kg, 80 g/kg and 120 g/kg) and crude lipid (80 g/kg, 120 g/kg, and 160 g/kg) were formulated in a two-factor (3×3) orthogonal design. 945 mandarin fish with similar body weight were randomly assigned into 27 tanks and the experiment diets were fed to triplicate tanks twice daily for 10 weeks. Results showed that different dietary treatments did not significantly affect survival rate and growth performance of mandarin fish.

In this study, we first verified the feasibility of using Antarctic krill as a raw material for quick-brewed fish sauce, and the results showed that the amino acid nitrogen (AAN)and total soluble nitrogen(TSN) in the fermented 30 days fish sauce met the national level fish sauce standards, but the histamine content exceeded the maximum limit value of histamine in fish sauce (400 mg/kg) set by the International Codex Alimentarius Commission (CAC) and the European Union (EU). On this basis, the correlation between physicochemical indexes and bacterial communities during the fermentation of fish sauce was investigated using high-throughput sequencing, culture method. The correlation analyses revealed the relationship between bacterial communities and the quality and safety of fish sauce, and these studies will be helpful for the development of Antarctic krill fish sauce.

To meet the market demand and promote the high-quality development of the whole quinoa industry chain, this study aimed to analyze the purchase behavior of quinoa from the aspects of nutritional trust and subjective norms.
Methods: Based on 1,078 micro-survey data from 16 administrative districts in Shanghai, this paper empirically examined the influence of trust in nutrition and subjective norms on consumers' purchase behavior and willingness to pay of quinoa products, and further investigated the moderating effect of preference heterogeneity.

To elucidate the mechanisms of ozone gas (OG) and slight acid electrolyzed water (SA) on the quality changes in texture, water-holding capacity, and softening of salmon, the bacterial growth, total volatile basic nitrogen, thiobarbituric acid reactive substance, a* value, texture properties, carbonyl content and free sulfhydryl content, myofibrillar fragmentation index, and proteolytic activities of salmon treated by OG (1 mg/m for 10 min) and SA (ACC 30 mg/L, 5 min) individually and in combination were studied. The results showed that total viable counts of SA + OG (dipped in SAEW for 5 min, followed by exposure to ozone for 10 min) was about 3.36 log CFU/g lower than the control (CK) (dipped in distilled water for 5 min) on day 10.

The intertidal zone, a dynamic interface of marine, atmospheric, and terrestrial ecosystems, exposes microorganisms to rapid shifts in temperature, salinity, and oxidative stress. Strain LCG004, representing a novel species, was isolated from the Lu Chao Harbor's intertidal seawater in the Western Pacific Ocean. The genome of the organism reveals its metabolic versatility, enabling the utilization of various organic substrates-ranging from organic acids, amino acids, to sugars, and encompassing complex carbohydrates-as well as adept handling of inorganic nutrients, thereby highlighting its significant role in the cycling of nutrients.

In this study, the soybean protein isolate / chitosan oligosaccharide (SPI/COS) conjugates were developed using glycosylation and used as a stabilizer of carvacrol-loaded emulsions for refrigerating sea bass (Lateolabrax maculatus). The results of Fourier transform infrared spectroscopy and fluorescence spectroscopy showed that COS modified the secondary and tertiary structure of SPI by covalent binding. The SPI/COS conjugate with a mass ratio of SPI and COS of 4:1 (SPI/COS-4) exhibited high glycosylation degree, great water solubility and better emulsification properties.
