In this study, raw milk was collected from three different grades of pastures and processed by pasteurization, blending and ultra-high temperature sterilization (UHT) in a factory production line with a feed size of 10 tons. Additionally, all samples (from raw milk to UHT milk samples) were analyzed by -nose and GC-MS. Childhood obesity is a global public health concern associated with various health risks, including disrupted sleep patterns. This study investigated the effects of kiwifruit consumption and small-sided soccer games (SSSG) over 4 weeks on sleep patterns in overweight/obese children with sleep problems. Front-of-pack nutrition labels (FOPNLs) have been developed since 1989 to curb the increasing prevalence of obesity and non-communicable diseases (NCDs) and to promote healthy consumption choices. While several countries have introduced their own labeling schemes on a voluntary basis, the European Commission aims to harmonize a FOPNL system that will be mandatory for all member states. This paper summarizes a contribution to the current debate on FOPNLs from Italian and Spanish researchers working in the fields of human nutrition, nutritional epidemiology and public health education and communication policy before the final decision on FOPNLs to become mandatory in Europe is taken.

This study investigated the anti-inflammatory properties and sequence variations of soy peptides during simulated digestion and absorption. Results showed that 500 Da peptides with N-terminal Leu, Ile, and Tyr exhibited enhanced intestinal transport, while the absorbed peptides in the Bromelain + Flavourzyme group (SIA-BF) demonstrated the strongest anti-inflammatory activity by inhibiting IκB phosphorylation. Mass spectrometry revealed that SIA-BF peptides were rich in branched-chain amino acids at the N-terminus and basic amino acids at the C-terminus.

This study investigated dorsal aleurone thickness (DAT) in a rice diversity panel comprising 180 varieties, revealing that DAT of the Geng subspecies is typically greater than that of the Xian subspecies. Reactive oxygen species exacerbate nonalcoholic steatohepatitis (NASH) by oxidizing macromolecules; yet how they promote NASH remains poorly understood. Here, we show that peroxidase activity of global hepatic peroxiredoxin (PRDX) is significantly decreased in NASH, and palmitic acid (PA) binds to PRDX1 and inhibits its peroxidase activity. Using three genetic models, we demonstrate that hepatic PRDX1 protects against NASH in male mice.

Microwave-assisted extraction conditions were optimized using response surface methodology to evaluate the effects of extraction parameters on the yield and carbohydrate content of Luffa aegyptiaca mucilage. Extraction at 540 W for 2 min with a 1:20 (g/mL) was determined as the optimal parameter, resulting in a maximum yield of 5.90 % (w/w) with 63 % carbohydrate content consisting of glucose, galactose, maltose, mannose, and galacturonic acid, with structural linkages of β (1 → 4) and β (1 → 6) glycosidic bonds.
