This study aims to examine employing ultrasound-assisted extraction of bioactive components from leaves and apply them in beef patties preservation, as well as antioxidant and inhibitory activities and sensory qualities. The study included studying the chemical content and minerals of the leaves, preparation of aqueous and alcoholic extracts using an ultrasound device, then exploring the extraction yield. The current study was designed to assess the safety and quality status of street-vended barbecue chicken samples. The samples were collected from four regions of Faisalabad city: Ghulam Mohammad Abad (R), Jhang Road (R), Sargodha Road (R), and Satiana Road (R); and compared with the self-prepared barbecue chicken sample (R). Purposely, all the collected samples were subjected to assess the quality aspects by physicochemical analyses.
