Lipid oxidation will lead to the deterioration of flavor, color and texture of aquatic products with high fatty acid content. The mechanism of ultrasound (US) combined with rosmarinic acid (RA) on lipid oxidation and endogenous enzyme activities of large yellow croaker during cold-storage (4 ℃) was investigated. The result showed that the US and RA have synergistic effects in delaying lipid oxidation and inhibiting endogenous lipase and lipoxygenase (LOX) activities related to oxidation.

This study investigated the possibility of using green solvent natural deep eutectic solvents (NADESs) as dual solvent-catalysts for the solubilization and deglycosylation of soybean isoflavones. In this study, single-layer coating using chitosan (Ch) and sodium alginate (SA) solutions and their gel coating (ChCSA) formed by layer-by-layer (LbL) electrostatic deposition using calcium chloride (C) as a cross linking agent were prepared to improve storage qualities and shelf-life of fresh-cut purple-flesh sweet potatoes (PFSP). The preservative effects of single-layer coating in comparison with LbL on the quality parameters of fresh-cut PFSP, including color change, weight loss, firmness, microbial analysis, CO production, pH, solid content, total anthocyanin content (TAC), and total phenolic content (TPC) were evaluated during 16 days of storage at 5 °C. The biological activities of Sargassum fusiforme polysaccharides (SFP) were affected significantly by the extraction method. In order to screen the optimum extraction technology for SFP with high yield and biological activities, six extraction methods, including hot water extraction (HWE), acid-assisted extraction (ACAE), alkali-assisted extraction (ALAE), ultrasonic-assisted extraction (UAE), microwave-assisted extraction (MAE) and hydrogen peroxide/ascorbic acid-assisted extraction (HAE) were compared for the preparation of SFP. Based on the yield and in vitro antioxidant activity of the crude polysaccharides obtained by the six extraction methods, HAE was selected for the extraction of SFP.

Rice blast caused by Pyricularia oryzae is one of most devastating fungal diseases in rice, reducing the annual yield of rice worldwide. As an alternative to fungicide for curbing rice blast, synthesis of nickel-chitosan nanoparticles (Ni-Ch NPs) was performed with nickel chloride and assessed its efficacy in inflating plant growth and hindrance of Pyricularia oryzae (blast pathogen). Characterization of Ni-Ch NPs from SEM, TEM, and DLS analyses showed smooth- and spherical-shaped nanoparticles in the range of 20-70 nm.

This work fabricated natamycin-loaded zein-casein nanoparticles (N-Z/C NPs) by a pH-driven approach and applied to control postharvest peach brown rot caused by Monilinia fructicola. When casein and phosphoric acid were used as a stabilizer and neutralizing acid, respectively, NPs with mean particle sizes < 100 nm and zeta-potentials < -30 mV could be obtained. The NPs could increase the aqueous dispersibility of natamycin and showed high stability against environmental changes, which could be attributed to both hydrophobic stacking and hydrogen bonds between natamycin and zein.

Either selenium or serine could modulate glucose homeostasis, however, whether there are synergistic effects of selenium with serine on diabetes remains to be unknown. In the present study, eight male db/m mice were used as a control, and 24 male diabetic db/db mice were either orally gavaged with PBS, or with selenomethionine alone, or with both selenomethionine and serine, to investigate the effects of selenomethionine and serine on body weight and glucose level. Furthermore, intestinal microbiota composition was analyzed and fecal microbiota transplantation (FMT) was performed to explore whether microbes mediate the beneficial effects of selenomethionine and serine.

The aim of this study was to investigate the effects of hydrothermal treatment at different temperatures and times on the structure and functional properties of quinoa protein isolate (QPI). The structure of QPI was investigated by analyzing changes in the intrinsic fluorescence spectrum, ultra-violet (UV) spectrum, and Fourier transform infrared spectrum. In this work, the binding mechanism of myofibrillar protein (MP) with malondialdehyde and 4-hydroxy-2-nonenal under low temperature vacuum heating was investigated multispectroscopic and molecular docking. The results showed that binding interaction and increasing temperature caused significant changes in the conformations as well as a decrease in the value of protein intrinsic fluorescence, surface hydrophobicity, and fluorescence excitation-emission matrix spectra. Furthermore, the decrease in -helix and -turn, increase in -sheet and a random coil of MP, imply the MP molecules to be more unfolded.

Probiotics are sensitive to external conditions, resulting in low survival rates after being ingested or during food production, transportation and storage. In order to improve the survival rate of Lactobacillus plantarum (LP) during gastrointestinal digestion, storage, and freeze-drying, alginate-whey protein isolate (ALG-WPI) and alginate-pectin-whey protein isolate (ALG-PEC-WPI) composites were employed to encapsulate LP. The encapsulation efficiency of ALG-WPI-LP and ALG-PEC-WPI-LP beads both reached more than 99 %.
