Present study evaluated the combined effects of chitosan (CH) and salicylic acid (SA) coatings in modulation of fruit softening enzymes in Punjab Beauty pear (Pyrus pyrifolia × Pyrus communis) fruit stored under cold (0-1 °C and 90-95 % RH) and supermarket (20-22 °C and 80-85 % RH) conditions. An experiment on the use of farmyard manure and biofertilizer along with application of chemical phosphorus was conducted to assess the impact of differential doses of phosphorus, farmyard manure and consortium biofertilizer application on the development, yield and phosphorus uptake during the year 2018 and 2019. The impact of different treatments was recorded on the plant height, dry matter partition, yield and yield attributes, phosphorus uptake and soil phosphorus availability using standard methods. In this study, spray drying mechanism was used to optimize the nanoencapsulation of iron and zinc using potato starch at constant proportion and variable maltodextrin and core material to keep the total solids of spray drier feed solution at 10, 20, 30 and 40% levels. Starches isolated from two recently released rice cultivars (PR 121 and PR 116) grown in sub-tropical climates of Punjab, India were subjected to gamma irradiation at 0, 2, and 10 kGy doses using a Co(60) irradiator source. Physicochemical, thermal, pasting, and morphological properties were studied. Irradiation resulted in a significant decrease in apparent amylose content, swelling power and pasting properties.

Effect of soya flour addition to 70% extraction bread wheat flour (PBW-343) at (0, 5, 10, 20 & 30%) was investigated for physico-chemical, dough handling and pretzel making properties. Results revealed that with increasing DSF addition, farinogram characteristics; water absorption, arrival time, dough development time and dough stability increased while mixing tolerance index and degree of softening decreased. Amylogram characteristics gelatinization temperature, peak viscosity, peak temperature and viscosity at 95 °C decreased with extended rate of DSF addition.

The impact of grossly polluted waters of the Budha Nallah (BN) on the flesh quality of a few fish species inhabiting river Satluj following its confluence with the river has been studied. For flesh quality, levels of extractable proteins (EP), carbohydrate content and total lipid (TL) contents have been compared in Cirrhina mrigala, Cirrhina reba, Crossocheilus latius and Mystus cavasius collected from downstream (DS) region (selected at 40-42 km following confluence of BN with the river) and an upstream (US) region (selected at 8-10 km before the confluence of BN with the river) of river Satluj. The results have shown a significant decline in the EP content, carbohydrates and TL contents in the flesh of these fish species collected from DS region.

The effect of blending different types of rice bran in wheat flour on the rheological, pasting and baking properties is reported. Dough development time and strength as measured through farinograph decreased with the blending of unstabilized full fat and defatted bran; whereas, blending of stabilized full fat and defatted bran improved the dough strength. Pasting properties revealed an increase in gelatinization temperature and decrease in paste viscosities and set-back values with the blending of various types of rice bran.
