Haskap berry anthocyanin extract (HAE), a high-value and high-potential natural pigment, is prone to degradation by external factors such as heat and light. To improve the chemical and color stability of HAE, the binary and ternary composite system of HAE, BSA and copigments was compared for the protection of anthocyanin in the heat and light treatments at neutral pH. Compared to the binary composite system of HAE with BSA and ferulic acid (FA), the select HAE-BSA-FA ternary composite system decreased the total anthocyanin degradation rate (TADR) to 65.

This study explores the possibility of exogenous lysine combined with nonenzymatic glycation to prepare an aqueous colloidal dispersion of meat protein. The results indicate that compared to the MPs aqueous solution, the aqueous colloidal dispersion possesses outstanding dispersion and stability. Results from structural analysis and microscopic observation show that l-lysine can promote the swelling and dissociation of MPs and form an entanglement network due to intermolecular bonding.

Rice direct-seeding technology is regarded as a promising alternative to traditional transplanting due to its labor- and water-saving benefits. Gout mainly caused by the increase of uric acid level in serum poses a threat to human health.
