Plant cell wall plays important roles in the regulation of plant growth/development and affects the quality of plant-derived food and industrial materials. On the other hand, genetic variability of cell wall structure within a plant species has not been well understood. Here we show that the endosperm cell walls, including both starchy endosperm and aleurone layer, of rice grains with various genetic backgrounds are clearly classified into two groups depending on the presence/absence of β-1,4-linked glucomannan.

Tomato () is a rich source of lycopene, a carotenoid that confers various positive biological effects such as improved lipid metabolism. Here, we conducted a randomized, double-blind, placebo-controlled, parallel-group comparative study to investigate the effects of regular and continuous intake of a new high-lycopene tomato, a variety named PR-7, for 12 weeks, based on 74 healthy Japanese subjects with low-density lipoprotein cholesterol (LDL-C) levels ≥120 to <160 mg/dL. The subjects were randomly assigned to either the high-lycopene tomato or placebo (lycopene-free tomato) group.

It is known that green tea helps prevent obesity and diabetes mellitus. In this study, we aimed to determine whether green tea ameliorates hyperglycemia and the mechanism involved in diabetic rodents. Green tea consumption reduced blood glucose and ameliorated glucose intolerance, which was assessed using an oral glucose tolerance test in both streptozotocin-induced type 1 diabetic rats and type 2 diabetic KK-A mice.

We investigated the combined effects of 'Benifuuki,' a tea cultivar that contains O-methylated catechins like epigallocatechin-3-O-(3-O-methyl) gallate, and quercetin on hepatic fat accumulation in male Sprague-Dawley rats fed a high-fat, high-cholesterol diet for 15 d. Rats given 'Benifuuki'+quercetin had synergistically lower liver triglyceride (TG) level compared with rats given 'Benifuuki' or quercetin alone. Compared with 'Benifuuki' or quercetin alone, supplementation with 'Benifuuki'+quercetin resulted in a low level of fatty acid synthase (FAS) and stearoyl-CoA desaturase1 (SCD1) gene expression levels.

Some strains were found to aggregate upon the addition of glucose, which resulted in glucose fermentation and pH decrease. Surface layer proteins (Slp) that represented the outermost layer of the bacteria decreased under these low pH conditions, probably because of the partial detachment of Slp from the cell surface triggered by the acidic environment. Similar observations of decreased Slp and aggregation were observed under the culture conditions, confirming that aggregation was due to the partial Slp detachment under the acidic conditions of glucose fermentation.

The objective of this study was to study and compare the impact of HMT on rheology and textural properties observed between sago and arenga starces, and then related to structural change of amylopectin. The HMT were conducted using the autoclaving method at 20% moisture content and heated to 120 C for 60 min for sago and 90 min for arenga starch as optimum condition. The HMT shifted gelatinization temperature higher and reduced the enthalpy of both starches.

The present study investigated the antiallergic and anti-inflammatory effects of 10-hydroxy-cis-12-octadecenoic acid (HYA), a novel gut microbial metabolite of linoleic acid, in NC/Nga mice, a model of atopic dermatitis (AD). Feeding HYA decreased the plasma immunoglobulin E level and skin infiltration of mast cells with a concomitant decrease in dermatitis score. HYA feeding decreased TNF-α and increased claudin-1, a tight junction protein, levels in the mouse skin.

It is known that catechins interact with the tryptophan (Trp) residue at the drug-binding site of serum albumin. In this study, we used catechin derivatives to investigate which position of the catechin structure strongly influences the binding affinity against bovine serum albumin (BSA) and human serum albumin (HSA). A docking simulation showed that (-)-epigallocatechin gallate (EGCg) interacted with both Trp residues of BSA (one at drug-binding site I and the other on the molecular surface), mainly by π-π stacking.

Sorghum bagasse samples from two sets (6 and 6; 18 and 18) of wild-type and corresponding "brown midrib" () mutant strains of sweet sorghum were evaluated as the feedstock for fermentable sugar recovery the calcium capturing by carbonation (CaCCO) process, which involves Ca(OH) pretreatment of bagasse with subsequent neutralization with CO for enzymatic saccharification. Saccharification tests under various pretreatment conditions of the CaCCO process at different Ca(OH) concentrations, temperatures or residence periods indicated that strains are more sensitive to the pretreatment than their counterparts are. It is expected that variant 6 is more suitable for glucose recovery than its wild-type counterpart because of the higher glucan content and better glucose recovery with less severe pretreatment.
