In the present study, the effects of psyllium gum/sodium-alginate (PG/SA) coatings incorporated with essential oil (HEO) and copper oxide nanoparticles (CuO NPs) on various properties of silver carp fillets were investigated and monitored over 15 days of chilled storage condition (4 °C ± 1). Industrial, agricultural, and natural pollution pose a critical problem for the Prairie provinces of Canada, with significant environmental and health concerns. This study addresses a critical knowledge gap by assessing the cumulative impacts of pollutants in the Prairie region, which hosts 40 % of the Canada's indigenous population, often living near these pollution sources. By innovatively integrating Sentinel-5P satellite data, Google Earth Engine, ArcGIS, and Python, we show the trends in CO, NO₂, HCHO, SO₂, and aerosols from 2019 to 2023 at high resolution for the entire region, which sheds new light on the dynamics that operate beyond conventional air quality monitoring.

This research aimed to produce a multifunctional bread by adding hydrothermally processed rice bran (RB), green tea extract (GTE), and rosemary extract (RE). In the first step, hydrothermal processing was used to reduce the amount of phytic acid in RB, which decreased by 55 %. This study investigates the properties of egg-free mayonnaise prepared using chia seed protein hydrolysate (CSPH) and pectin extracted from apple pomace (PA) as alternatives to egg, comparing it to traditional egg-based mayonnaise. Chia seed protein was hydrolyzed using Protamex and Bromelain enzymes, while apple pectin was extracted through acid hydrolysis at 90 °C. Four mayonnaise treatments were prepared: T1 (control: 6 % egg), T2 (4 % egg + 1 % CSPH + 1 % PA), T3 (2 % egg + 2 % CSPH + 2 % PA), and T4 (0 % egg + 3 % CSPH + 3 % PA).
