Due to their dense characteristics, direct-expanded products fortified with insoluble fiber are generally not well accepted. Understanding the interactions between starch and fiber could help to effectively choose and modify ingredients to produce products containing high amounts of fiber. Therefore, this study aims to explain the interplay between two starches (native and waxy corn) and two pomace types (blueberry and cranberry).

Nowadays, the interest toward products containing probiotics is growing due to their potential health benefits to the host and the research is focusing on search of new probiotic microorganisms. The present work was focused on the characterization of indigenous strains, isolated from different food matrixes, with the goal to select strains with probiotic or health-beneficial potential. A preliminary screening performed on fifty indigenous strains, in comparison to a commercial probiotic strain, allowed to individuate the most suitable ones for potential probiotic aptitude.

In ASEAN countries, small freshwater fish species contribute to the nutritional needs of people with few livelihoods by providing them with significant amounts of protein, fat, vitamins and minerals. Some species are eaten whole (with their organs, skin, bones, head and eyes). To estimate the vitamin A content of these foods, conventional saponification has been applied but has not been able to fully release the retinol.

Incorporating fiber at high levels (>10%) into direct-expanded products with acceptable texture is challenging. Fundamental explanations for the interaction of starch and fiber and the cause of expansion reduction need further understanding for the effective incorporation of fiber into expanded products. This study aims to explain how cellulose content impacts the physicochemical properties of starch-based extrudates and the long-range and short-range molecular changes of starch.

Screening of lactic acid bacteria for their potential use as aromatic starters in fermented vegetables.

Int J Food Microbiol

July 2021

Food Biotechnology & Innovation group, International Joint Research Laboratory, Tropical Bioresources & Biotechnology, Univ. Bourgogne Franche-Comté, AgroSup Dijon, PAM UMR A 02.102 and School of Biotechnology and Food Technology, Hanoi University of Science and Technology, Dijon, France; Tropical Fermentation Network, France.

Lactic acid fermentation is a traditional process to preserve foods and to modify their organoleptic properties. This process is generally conducted in a spontaneous way, allowing indigenous lactic acid bacteria (LAB) of the matrix and of the environment to compete and grow. The aim of this study was to better characterise LAB strains ability to modify aroma profiles in fruit and vegetable matrices, by focusing on two key enzymatic activities: β-glucosidase and alcohol dehydrogenase (ADH).

Resources Production and Safety Engineering Laboratory, Department of Earth Resources Engineering, Kyushu University, Fukuoka 819-0395, Japan.

Injecting nanofluids (NFs) has been proven to be a potential method to enhance oil recovery. Stranded oil is produced by wettability alteration where nanoparticles form a wedge film on pore wall surfaces, which is thought to shrink the pore space of the reservoir. Furthermore, ensuring the stability of the injected NF during the application is a major challenge.

October 2020

Faculty of Chemical and Food Engineering, Institute of Technology of Cambodia, Blvd. of the Russian Federation, Phnom Penh P.O. Box 86, Cambodia.

The objective of this work is to provide new insights into the mechanisms taking place during the drying of the mature grains of Kampot pepper, a cultivar of pepper ( L.), which is produced in the Kampot Province, Cambodia. Indeed, even if the Kampot pepper is recognized for its organoleptic qualities, no research works were dedicated to the drying of its mature grains, in order to yield red pepper.

This review provides focused insights into the contamination status, sources, and ecological risks associated with multiple classes of antibiotics in surface water from the East and Southeast Asia based on publications over the period 2007 to 2020. Antibiotics are ubiquitous in surface water of these countries with concentrations ranging from <1 ng/L to hundreds μg/L and median values from 10 to 100 ng/L. Wider ranges and higher maximum concentrations of certain antibiotics were found in surface water of the East Asian countries like China and South Korea than in the Southeast Asian nations.

Modulation of fungal biofilm physiology and secondary product formation based on physico-chemical surface properties.

Bioprocess Biosyst Eng

December 2019

Gembloux Agro-Bio tech, TERRA Research and Teaching Center, Microbial Processes and Interactions, University of Liège, Avenue de la Faculté 2B, 5030, Gembloux, Belgium.

Relative to the amount of knowledge concerning bacterial biofilms, little is known about the impact of physico-chemical properties of support material on fungal biofilm adhesion and physiology. In the field of industrial fermentation, large-scale production of low-cost fungal secondary product is a challenging area of research. In the present work, the effect of physico-chemical surface properties of five different materials (Teflon, glass, Viton™ rubber, silicon rubber, and stainless steel) on the production of class II hydrophobins (HFBI and HFBII) from Trichoderma reesei (HFB2a-2) and Trichoderma harzianum) was evaluated.

February 2019

Department of Civil and Environmental Engineering , Lehigh University, Bethlehem , Pennsylvania 18015 , United States.

Although unknown 25 years ago, natural arsenic contamination of groundwater affects over 50 countries and up to 200 million people. The economic viability was analyzed and modeled of eighty-eight community-based arsenic mitigation systems existing for up to 20 years in India and Bangladesh. The performances of three community-based arsenic mitigation systems that are ethnically different and separated across two different countries were monitored closely for 24 months of self-sustainable, long-term operation at WHO standards through local, paid caretakers.

Structural Evidence for the Substrate Channeling of Rice Allene Oxide Cyclase in Biologically Analogous Nazarov Reaction.

Front Chem

October 2018

Department of Molecular Biotechnology and Kumho Life Science Laboratory, College of Agriculture and Life Sciences, Chonnam National University, Gwangju, South Korea.

Allene oxide cyclase (AOC) is a key enzyme in the jasmonic acid (JA) biosynthetic pathway in plants, during which it catalyzes stereospecific conversion of 12,13()-epoxy-9(),11,15()-octadecatrienoic acid (12,13-EOT) to (+)-12-oxophytodienoic acid. Here, rice allene oxide cyclase (OsAOC) was localized to the chloroplast and its native oligomeric structure was analyzed by gel electrophoresis in the absence and presence of a protein-crosslinking reagent. The results suggest that OsAOC exists in solution as a mixture of monomers, dimers, and higher order multimers.

Fermentation has been used for centuries to produce food in South-East Asia and some foods of this region are famous in the whole world. However, in the twenty first century, issues like food safety and quality must be addressed in a world changing from local business to globalization. In Western countries, the answer to these questions has been made through hygienisation, generalization of the use of starters, specialization of agriculture and use of long-distance transportation.

Suitability of municipal solid waste in African cities for thermochemical waste-to-energy conversion: The case of Harare Metropolitan City, Zimbabwe.

Waste Manag Res

January 2019

5 Environmental Assessment and Technology for Hazardous Waste Management Research Center, Faculty of Environmental Management, Prince of Songkla University, Hat Yai, Songkhla, Thailand.

The recovery of energy from municipal solid waste (MSW) has gained popularity in many industrialized countries, but its adoption in economically developing countries, especially in Africa, has been slow. While capital investments and technical requirements for waste-to-energy (WtE) systems are among the most important causes for this slow adoption, the unavailability of data on the thermochemical quality of MSW as a potential feedstock for energy recovery is also a limiting factor. In this paper, Harare, a typical African city, was selected as a case study.
