The packaging system is one of the factors influencing the preservation of the nutritional value, microbiological safety, and sensory attributes of meat. The study investigated changes in physicochemical and microbiological properties taking place during 15-day refrigerated storage of two calf muscles, the longissimus lumborum (LL) and semitendinosus (ST), packaged in three systems, respectively, vacuum packing (VP), modified atmosphere packaging (MAP, 80% O + 20% CO), and a combined system (VP + MAP, 8 d in VP followed by 7 d in MAP). LL and ST stored in VP had significantly lower levels of lipid oxidation, higher α-tocopherol content, and higher instrumentally measured tenderness in comparison with the samples stored in MAP.

The main objective of the proposed approach is to accelerate the transition of the bioeconomy towards a knowledge-based sustainable system, covering key biobased sectors strongly linked to agriculture in Poland, in line with the European Green Deal. The proposed model of a bioeconomy development strategy, with a special focus on agriculture, is based on two pillars: (1) strengthening traditional, relevant (in terms of economic indicators) sectors of the economy and improving their 'sustainability' by implementing the proposed transformation pathways; and (2) developing economic activities or 'niche or novel sectors' that are prospective accelerators of change in the face of climate challenge, and ensuring their upscaling. This approach forms the basis for policy planning at national and regional level in these European Union (EU) countries, where bioeconomy development strategies have been initiated through dialogue between science, administration and industry stakeholders.

Deer antlers, usually harvested annually on a farm, are an accessible material used to determine the exposition to potentially toxic elements, PTEs, during growth. Moreover, the study of antlers from animals of different ages allows the assessment of long-term exposition to these elements. The rocks surrounding Wieliczka salt deposits are an extreme, deep subsurface ecosystem that as we studied previously harbors many microorganisms, including methanotrophs. In the presented research bacterial community structure of the Wieliczka Salt Mine was determined as well as the methanotrophic activity of the natural microbiome. Finally, an enrichment culture of methane-consuming methanotrophs was obtained.
