Background/objectives: Polyphenols represent a new strategy of dietary intervention for heat stress regulation.
Methods: The metabolic and genetic effects of three heat stress-regulated mung bean polyphenols on mouse small intestinal epithelial Mode-k cells were investigated by metabolomics-transcriptomics correlation analysis at different heat stress levels.
Results: Lipid metabolism, energy metabolism, and nervous system pathways were the key metabolic regulatory pathways.

Florfenicol (FF), a third-generation chloramphenicol antibiotic widely used in food-producing animals, has become a "pseudopersistent" environmental contaminant, raising concerns about its potential ecological and human health impacts. However, its bioaccumulation behavior and hepatotoxic mechanisms remain poorly understood. This study aims to address these gaps with a 28-day exposure experiment in adult zebrafish at 0.

The rapid sulfhydrylation of chlorothalonil (CHT) in sulfur-rich vegetable matrices was observed in our previous study. However, the formation pathway, residual behavior, and toxicity of sulfhydrylated CHT remain unclear. In this study, we reveal that 4-sulfhydryl chlorothalonil (4-SH-CHT) can be formed by the reaction of CHT with HS species.

The browning of Thompson seedless grapes during shade-drying significantly hampers the sustainable and healthy development of the industry. This study investigates the browning phenomenon and reactive oxygen species (ROS) dynamics when Thompson seedless grapes, treated with adenosine triphosphate (ATP), 2,4-dinitrophenol (DNP), and water (QS), are dried in the shade. The effects of these treatments on ROS metabolism were analyzed through physiological, biochemical, and proteomic analyses.

Lycium barbarum is a type of "medicine-food homology" whose geographical origin has attracted strong interest from consumers due to different regional quality characteristics. A sophisticated OPLS-DA model to verify Lycium barbarum origin was developed using 266 samples gathered from five cultivars in two regions between 2020 and 2022, which was based on 67 indices, including nutrients, bioactives, elements and stable isotopes. Twelve variables (fructose, δH, glucose, tartaric acid, Mo, Na, Sr, His, Phe, Mn, Lys and Rb) were selected to refine models that could distinguish Lycium barbarum origin without being impacted by cultivar or year.

The incorporation of honeysuckle as a silage additive in alfalfa production has yielded promising results; however, the underlying microbial mechanisms during fermentation remain poorly understood. This study leveraged high-throughput sequencing and nutrient profiling to elucidate microbial population dynamics over 45 days of anaerobic fermentation within a vacuum-assisted co-culture system comprising varying fresh weight ratios of honeysuckle branches, , and alfalfa. The experimental design encompassed a -supplemented treatment (M group) and an unsupplemented control (R group), each with five honeysuckle percentages (5 %, 10 %, 15 %, 20 %, 25 %) and respective negative controls.

The separation of propylene (CH) and propane (CH) is of great significance in the chemical industry, which poses a challenge due to their almost identical kinetic diameters and similar physical properties. In this work, we synthesized an ultramicroporous flexible hydrogen-bonded organic framework (named HOF-FJU-106) by using molecule 2,3,6,7-tetra (4-cyanophenyl) tetrathiafulvalene (TTF-4CN). The formation of the dimer causes the TTF-4CN molecular to bend and weaken π-stacked interactions, coupled with the flexibility of C≡N H-C hydrogen bonds, which leads to reversible conversion between open and closed frameworks through the mutual slip of adjacent layers/columns under activation and stimulation of gas molecules.

The authentication of milk and dairy products has great significance for food fraud. The present investigation entailed the development of a novel method that amalgamates the double-tube approach with multiplex real-time polymerase chain reaction (PCR) technology, incorporating TaqMan probes, to facilitate the high-throughput screening and detection of animal-derived constituents within milk and dairy products. Eight dairy-derived animal-specific primers and probes were designed for the mitochondrial () gene of eight dairy products, including cow, buffalo, yak, goat, sheep, horse, donkey, and camel.

Humans are often exposed to complex mixtures of multiple pollutants rather than a single pollutant. However, the combined toxic effects and the molecular mechanism of PFOS and BaP remain poorly understood. In this study, two typical environmental pollutants, perfluorooctane sulfonate acid (PFOS) and benzo [a]pyrene (BaP), were selected to investigate their combined neurotoxic effects on rat C6 glioma cells at environmentally relevant concentrations.

Background: Alginate oligosaccharides (AOS) exhibits notable effects in terms of anti-inflammatory, antibacterial, and antioxidant properties. Deoxynivalenol (DON) has the potential to trigger intestinal inflammation by upregulating pro-inflammatory cytokines and apoptosis, thereby compromising the integrity of the intestinal barrier function and perturbing the balance of the gut microbiota.
Objectives: We assessed the impact of AOS on mitigating DON-induced intestinal damage and systemic inflammation in mice.

In this study, we combined two distinct extraction and separation techniques with the aim of comprehensively collecting metabolite features in sprouts, particularly hydrophilic compounds. By synergistically analyzing the data using MS-DIAL and MetaboAnalystR, we obtained a greater number of annotated metabolites and explored differences in annotation across analytical tools. We found that this approach significantly increased the number of detected metabolite features and the final identification counts.

The freshness of Atlantic salmon is influenced mainly by tissue metabolism, which in turn is affected by storage time and conditions. The alterations in taste profiles and nutritional values of salmon when packaged using vacuum methods have not been fully understood, and the factors contributing to these changes require further research. In this work, the extraction method for flavor nutrients from salmon was optimized via the Plackett-Burman (PB) test.

The use of disinfectants containing benzalkonium chloride (BAC) has become increasingly widespread in response to triclosan (TCS) restrictions and the COVID-19 pandemic, leading to the increasing presence of BAC in aquatic ecosystems. However, the potential environmental health impacts of BAC on fish remain poorly explored. In this study, we show that BAC and TCS can induce the gut dysbiosis in zebrafish (), with substantial effects on health.

Organochlorine pesticides (OCPs) are still occurring in various foodstuffs after the ban on their use. However, it remains unclear concerning the contamination source of OCPs in livestock and poultry food products and associated health risks. To fill this gap, we characterized the residual levels of 19 OCPs in multiple types of meats and eggs, which were sampled across China within the same period.
