Skeletal muscle is crucial for health, and glucocorticoid-induced atrophy poses a significant clinical challenge. This study utilized a dexamethasone (Dex)-induced mouse model to assess the impact of selenium supplementation on skeletal muscle atrophy during and after Dex treatment. Increasing evidence suggests the existence of a 'gut-muscle axis', where gut microbiota plays a regulatory role in muscle metabolism and function.

Free-radical-induced grafting of rice starch with gallic acid and evaluation of the reaction products' ability to stabilize Pickering emulsions.

Int J Biol Macromol

November 2024

School of Food Science and Engineering, Wuhan Polytechnic University, Wuhan 430023, China; Key Laboratory for Deep Processing of Major Grain and Oil, Wuhan Polytechnic University, Ministry of Education, Wuhan 430023, China.

Article Synopsis
  • Pickering emulsions can be stabilized using native rice starch (NRS), but they are not very hydrophobic, leading to instability.
  • Gallic acid (GA) is used to improve the stability of NRS by chemically modifying it through a free radical grafting process, resulting in a rice starch-GA graft copolymer (NRS-g-GA).
  • The modifications made the starch hydrophobic, increasing its contact angle and resulting in a more stable emulsion system with better emulsifying properties than unmodified NRS, suggesting potential new applications for both GA and NRS in food and industrial products.

Improvement in Storage Stability and Physicochemical Properties of Whole-Grain Highland Barley Pulp Prepared by a Novel Industry-Scale Microfluidizer System in Comparison with Colloid Milling.

Foods

July 2024

Key Laboratory of Precision Nutrition and Food Quality, Department of Nutrition and Health, China Agricultural University, No.17 Tsinghua East Road, Haidian District, Beijing 100083, China.

Article Synopsis
  • The study compared the effectiveness of an industry-scale microfluidizer system (ISMS) versus colloid milling in preparing whole-grain highland barley pulp (WHBP), focusing on storage stability and nutritional aspects.
  • Results showed that ISMS produced a more homogenous and stable WHBP with a smoother surface and a single-peak particle size distribution, unlike the colloid milling method which resulted in poor homogenization.
  • Additionally, WHBP created using ISMS had higher β-glucan levels, indicating improved nutritional value, and demonstrated that ISMS is beneficial for both the stability and health benefits of WHBP.

Inflammatory bowel disease (IBD), a complex chronic inflammatory bowel disorder that includes Crohn's disease (CD) and Ulcerative Colitis (UC), has become a globally increasing health concern. Nutrition, as an important factor influencing the occurrence and development of IBD, has attracted more and more attention. As the most important nutrient, protein can not only provide energy and nutrition required by patients, but also help repair damaged intestinal tissue, enhance immunity, and thus alleviate inflammation.

Protein is composed of peptides, essential nutrients for human survival and health, and the easy absorption of peptides further promotes human health. According to the source of the protein, it can be divided into plants, animals, and micro-organisms, which have important physiological effects on the health of the body, especially in enhancing immunity. The most widely used raw materials are animal protein and plant protein, and the protein composition formed by the two in a certain proportion is called "double protein".

Rapid authenticity assessment of PGI Hongyuan yak milk based on SICRIT-QTOF MS.

Food Chem

June 2024

Institute of Standard & Testing Technology for Agro-Products, Key Laboratory of Agro-Product Quality and Safety, Chinese Academy of Agricultural Sciences, Beijing 100081, China. Electronic address:

Hongyuan (HY) yaks live in a pollution-free environment, making HY yak milk a green food, but their short milk production period and low milk yield make yak milk precious and expensive. The phenomenon of counterfeiting HY yak milk with ordinary milk from other origins has already occurred, so the authenticity assessment of HY yak milk is necessary. This study developed a rapid soft ionisation by chemical reaction in transfer quadrupole time-of-flight mass spectrometry (SICRIT-QTOF MS) for HY yak milk differences assessment.

Hongyuan yak milk is a protected geographical indication (PGI) product of rich nutritional value, which is popular among consumers. Stable isotope ratio analysis (SIRA) is an effective way to protect the authenticity of the geographical origin of PGI products, and it is crucial to study the factors affecting stable isotopes. Firstly, we proved that the SIRA could be used to identify the geographical origin of Hongyuan yak milk, and that the identification accuracy in combination with δC and δO was 100 %.

Environmental attitude, value and awareness are widely believed to help reach the goal of cutting global food waste, but these psychological and cognitive factors are not always good predictors of wasteful behaviours. Notably, it is still unclear how the role of pro-environmental attitude (PEA) in reducing household food waste (HFW) changes with grocery shopping distance. To this end, using 7319 households survey data from China, this study investigates the moderating effect of shopping distance on the link between PEA and HFW behaviour.
