Distinguishing the botanic origins of monofloral honey is the foremost concern in ensuring its authentication. In this work, an innovative, green, and comprehensive approach was developed to distinguish the botanic origins of four types of rare honey, and the strategy involved in the following aspects: Based on theoretical design, suitable natural deep eutectic solvent (NADES) was screened to extract flavonoids from honey samples; after NADES extracts were directly analyzed by high-resolution mass spectrometry, the discrimination models of monofloral honey were established by untargeted metabolomics combined with machine learning. Based on the comparison of various models, the Random Forest algorithm had higher prediction accuracy for four types of monofloral honey, and characteristic compounds for each rare monofloral honey were screened based on SHapley Additive exPlanations values.

Developing highland barley products is complex, possibly due to the presence of β-glucan in highland barley. This study aims to investigate the impact of β-glucan on the physicochemical properties, microstructure, and molecular interactions of highland barley starch (HBS) during gelatinization and aging. Increasing the β-glucan content significantly reduced peak viscosity, setback viscosity, and breakdown viscosity, indicating altered gelatinization behavior.

Identification of chemical markers is important to ensure the authenticity of monofloral honey; however, the formation of chemical markers in honey has received little attention. Herein, using comparative metabolomics, we first identified chemical markers in chaste honey and then explored their formation and accumulation from nectar to mature honey. We identified agnuside and -hydroxybenzoic acid glucosides as chemical markers for chaste honey.

Flutolanil, an amide fungicide, had been detected frequently in aquatic environments; it is thus potentially a great risk to aquatic organisms and human health. Therefore, we investigated the developmental toxicity and the potential mechanism of thyroid endocrine disruption induced by flutolanil based on H NMR metabolomics analysis using a zebrafish model. Hatching of zebrafish embryo exposed to flutolanil was inhibited at 72 hpf (hour post-fertilization) and survival and body length at 96 hpf.

This study reports an analytical method for the determination of nitroimidazole and quinolones in honey using liquid chromatography-tandem mass spectrometry (LC-MS/MS). A modified QuEChERS methodology was used to extract the analytes and determine veterinary drugs in honey by LC-MS/MS. The linear regression was excellent at the concentration levels of 1-100 ng/mL in the solution standard curve and the matrix standard curve.

The amino acid contents of five floral sources Chinese honeys (jujube, rape, chaste, acacia, and lungan) were measured using reversed phase high-performance liquid chromatography (RP-HPLC). The results showed that proline was the main amino acid in most of the analyzed samples. Phenylalanine presents at the highest content in chaste honey samples, and the total amino acid contents of chaste honeys were also significantly higher than those of other honey samples.

Hydrogen peroxide (HO) is a major antibacterial activity-associated biomarker in honey. Measurement of endogenous HO in honey is of great value in prediction of the HO-depended antibacterial activity and characterization or selection of honey samples for their use as an antibacterial agent or natural food preservative.
