Propolis is a natural immunomodulator with anticancer activity. The objective of this study was to investigate the fermentation mechanism of ginkgo kernel juice (GKJ) under unfermented (Group A), Ginkgolide B (GB)-producing Lactiplantibacillus plantarum fermented (Group B), and co-induced fermented (Group C) conditions. The conditions were optimized and further evaluated for their vascular endothelial cell protective effects in vitro. The co-induced fermented GKJ group extensively promoted GB and total phenol contents, reaching 109.

Stirred soy yogurt as a dairy alternative is widely accepted among consumers, but its poor stability has been an urgent problem. We found that Leuconostoc mesenteroides Lm10 produced dextran reduced water mobility and improved the water holding capacity of stirred soy yogurt, especially with over 4 % sucrose added which could completely prevent whey separation. With the increase of dextran content, the particle size of stirred soy yogurt was significantly decreased, accompanied by the improvement of viscoelastic behaviors and resistance to deformation.

Internal lipids of normal amylose (NMS) and two high amylose (HMS56, HMS72) maize starches were removed to investigate the effect of proanthocyanidins (PA) on starch short-term (1 d) and long-term (21 d) retrogradation. Removal of internal lipids decreased the degree of retrogradation in PA-starch complexes after 1 d and 21 d retrogradation. The relative crystallinity (RC) of PA-NMS, PA-HMS56 and PA-HMS72 without internal lipid complexes after short-term retrogradation decreased by 5.

This study aimed to investigate how hyaluronic acid interfacial decoration affects the stability, cellular absorption, and anti-inflammatory effects of curcumin-loaded nanostructured lipid carriers. Nanocarriers were synthesized with an ovalbumin single layer and ovalbumin/hyaluronic acid double, mixed, or conjugated layers. High methyl-esterified citrus pectin (HMCP) is often used as a thickness in food products and is considered a poor emulsifier, especially in neutral pH solutions. Our previous findings show that the emulsifying capacity of HMCP could be significantly enhanced by calcium cations. Besides, the pH of the solution decreased in the presence of calcium cations.

In order to determine the appropriate harvesting period of planted in Nanjing city of China, this study analyzed the phenotypic characteristics and inclusions, including single fruit quality, fruit transverse and vertical diameter, kernel rate, water content, color, respiratory strength, crude fat, soluble sugar, soluble protein, and total phenols, of two cultivars 'Pawnee' and 'Wichita' during September and October, respectively. Results showed that the respiration intensity and values of pecan fruits decreased as the harvest date was delayed. 'Pawnee' fruits exhibited the highest seed kernel fullness, ∆E value, fruit transverse diameter, shape index, kernel yield, crude fat, and total phenolic content in late September and early October, while the quality of 'Wichita' fruits reached its peak in late October.

Low-salt stress germination is an effective way to improve the nutritional composition of food crops. Novel self-assembled aggregates of stearic acid (SA)-modified burdock polysaccharide (BP) for loading lutein were constructed, and the release and absorption properties of lutein in the aggregates in simulated gastrointestinal fluid were investigated. Three different degrees of substitution (DS) of SA-BPs were used to embed lutein, resulting in the encapsulation efficiency exceeding 90%. As one innate immune pattern recognition receptor, Toll-like receptor 4 (TLR4) recently has been considered as a critical player in glucolipid metabolism. Blueberries contain high level of anthocyanins, especially malvidin-3-glucoside (Mv-3-glc), which contribute the anti-inflammatory, hypoglycemic, and hypolipidemic effects. In this study, N-Methyl-N-nitrosourea (MNU) was intraperitoneally injected to construct a mouse retinitis pigmentosa (RP) model to evaluate the protective effect of chitosan and β-carotene on RP. The results demonstrated that chitosan synergized with β-carotene significantly reduced retinal histopathological structural damage in RP mice. The co-treatment group of β-carotene and chitosan restored the retinal thickness and outer nuclear layer thickness better than the group treated with the two alone, and the thickness reached the normal level.
