Microbial and Nonvolatile Chemical Diversities of Chinese Dark Teas Are Differed by Latitude and Pile Fermentation.

Understanding the microbial and chemical diversities, as well as what affects these diversities, is important for modern manufacturing of traditional fermented foods. In this work, Chinese dark teas (CDTs) that are traditional microbial fermented beverages with relatively high sample diversity were collected. Microbial DNA amplicon sequencing and mass spectrometry-based untargeted metabolomics show that the CDT microbial β diversity, as well as the nonvolatile chemical α and β diversities, is determined by the primary impact factors of geography and manufacturing procedures, in particular, latitude and pile fermentation after blending.

Inhibitory properties of saponin from peel against α-glucosidase.

The inhibitory properties towards α-glucosidase and elevation of postprandial glycemia in mice by the saponin constituent from peel were evaluated for the first time. Three saponins were isolated by silica gel and HPLC, identified as stigmasterol glucoside, campesterol glucoside and daucosterol by NMR spectroscopy. Daucosterol presented the highest content and showed the strongest α-glucosidase inhibitory activity with competitive inhibition.

Two nano amide-functionalized metal-organic frameworks (MOFs) with molecular formula [Co(oba) (bpta)]·(DMF) TMU-50 and [Co(oba) (bpfn)]·(DMF) TMU-51 obtained under ultrasonic method without any surfactants. The only difference between the two selected amide functionalized pillar ligands, N,N'-bis(4-pyridinyl)-terephthalamide (bpta), and N,N'-bis-(4-pyridylformamide)-1,5-naphthalenediamine (bpfn), is related to the naphthyl group, which led to the different luminescence properties of the nano frameworks. In this study, the special ability of the luminescent nano MOFs were investigated to sensitize nitroaromatic compounds.

In this paper, spherical calcium carbonate particles were prepared by using CaCl aqueous solution + NH·HO + polyoxyethylene octyl phenol ether-10 (OP-10) + n-butyl alcohol + cyclohexane inverse micro emulsion system. Then, nanoscale spherical silica was deposited on the surface of micron calcium carbonate by Stöber method to form the composite material. Pectin oligosaccharides with a molecular weight greater than 700 Da was obtained from the pomace of kiwi (Actinidia arguta). Based on characteristics analysis and inhibitory activity of advanced glycation end products (AGEs) formation in vitro, the target pectin oligosaccharides was added to infant formulas and then subjected to accelerated storage. Results showed that pectin oligosaccharides supplementation inhibited the browning of infant formulas and glassy transition of lactose, and slowed down the increase of water activity under accelerated storage conditions.

A capillary-based SERS sensor was fabricated for ultrasensitive and selective detection of Hg in water. Au@Ag core-shell NPs embedded with 4-mercaptobenzoic acid (4-MBA) (Au@4-MBA@Ag) were prepared by a seed growth method and fixed on the inner wall of the glass capillary to obtain the sensor. Owing to the amalgamation between Ag and Hg, the capillary-based SERS sensor can specifically recognize the reduced Hg without any recognition element, and the resulted Ag/Hg amalgam can weaken the SERS activity of Ag shell; thus, the SERS intensity of the embedded 4-MBA at 1075 cm gradually decreased with the increase of Hg concentration.
