Sour and sweet cherries were evaluated as functional components in bread-making because of their bioactive microconstituent content. Five forms of enrichment for each fruit, including the hydroalcoholic extract, lyophilized pulverized fruit, lyophilized extract, and their combinations, were used for supplementation. The physicochemical (pH, color, moisture, rheology, and texture) and sensory properties of dough and bread were assessed in different environments (biological and chemical leavening).

Gluten-free formulations (GF) were utilized as food inks enriched with sour-cherry powder (SCP) and lyophilized extract (SCLE), and their physicochemical, rheological, and thermomechanical properties were evaluated with respect to different leavening conditions. Post-printing drying was also assessed in terms of texture, color, and phenolic substances. SCP and SCLE enrichment decreased lightness by 15% and increased red hue by almost 30%, mainly in yeast formulations.

Objective: Pompe disease is a rare autosomal recessive disorder caused by the deficiency of acid α-glycosidase resulting in accumulation of glycogen in the lysosomes. The late-onset form of the disease (LOPD) causes primarily progressive muscle weakness and respiratory insufficiency. The rate of force development (RFD) is vital for power athletes. Lean body mass (LBM) is considered to be an essential contributor to RFD, nevertheless high RFD may be achieved by athletes with either high or low LBM. The aim of the study was to describe the relationship between lower-body LBM and RFD, and to compare RFD in taekwondo athletes and track and field (T&F) throwers, the latter having higher LBM when compared to taekwondo athletes.

Background: Dendritic cells activated by hepatitis C virus (HCV) produce high amounts of interleukin (IL)-12, considered to be associated with HCV clearance. The aim of this study was to investigate the IL-12 levels in HCV-infected patients, before and after the application of combination therapy with Pegylated Interferon-α2β plus Ribavirin.

Currants and Sultanas (Vitis vinifera L.) are dried vine products produced in Greece and used broadly in the Mediterranean diet. This paper attempts to contribute to international discourse on the responsibility of macro structures (economic and political) and private agencies for the production and distribution of vulnerability. It does so by focusing on an individual economic entity, small manufacturing firms (SMFs), in a specific location, western Athens, Greece. By evaluating the losses that SMFs sustained in the earthquake of 7 September 1999, the paper points to variations in vulnerability levels among such firms and highlights the 'sources' of vulnerability they confront.
