This study compared four thawing methods ultrasound thawing (UT), refrigerator thawing (RT), hydrostatic thawing (HT), and microwave thawing (MT) to assess their impact on the quality of Tibetan pork, focusing on thawing loss, tenderness, color variation, and alterations in protein secondary structure and moisture content. Developing highland barley products is complex, possibly due to the presence of β-glucan in highland barley. This study aims to investigate the impact of β-glucan on the physicochemical properties, microstructure, and molecular interactions of highland barley starch (HBS) during gelatinization and aging. Barley is an important source of sustainable diets for humans, while its brans is commonly disposed as wastes. The recycling of barley brans has become a key for facilitating the valorization of barley as a whole to achieve its sustainable development. The unique ecological environment of the Qinghai-Tibetan Plateau has endowed Chinese sea buckthorn leaves with rich bioactivities. In this study, we investigated the bioactivity and stress resistance mechanisms of flavonoids derived from Chinese sea buckthorn leaves (FCL) native to the Qinghai-Tibet Plateau. Our analysis identified a total of 57 flavonoids, mainly flavonol glycosides, from FCL, of which 6 were novel flavonoids.

To obtain nutritious, healthy, and flavor-enriched sour meat products, the effects of different frying methods (microwave, air-frying, and traditional frying) on the flavor quality of low-salt sour meat were evaluated using metabolomics and other flavor analysis techniques. The pH value of the sour meat rose dramatically, while the TBARS value dropped significantly after frying. E-nose and E-tongue results showed that air-frying could reduce acidity and improve umami.

Castration promotes subcutaneous fat deposition that may be associated with metabolic adaptations in the liver.
