The colorimetric sensor array real-time monitoring system with multivariate analysis was established for discrimination of potato varieties with different types and degrees of corruption. The characteristic volatile compounds of fresh, dry rot and soft rot potatoes was identified by Gas Chromatography-Mass Spectrometry and the 3 × 4 array was fabricated to capture the characteristics volatile compounds. Pregelatinized starch (PGS) is often used to improve the processing quality of foodstuffs, but little attention has been paid to the effects of different reheating methods and degree of starch gelatinization (DSG) on their rheological and textural properties. In this study, pregelatinized rice starches (RS) with gelatinization degrees ranging from 58% to 100% were prepared via different Rapid Visco Analyser (RVA) heating procedures and reheated in various methods, including high-power microwave (HM), low-power microwave (LM), and water bath. The rheological behavior and textural properties were explored, and the results demonstrated that the consistency, gel strength, hardness, and springiness of PGS in all tested samples decreased significantly after reheating.

Unlabelled: By using a mimicked heating with ex-situ liquid nitrogen flash freezing method, multi-scale structural evolution behaviors of normal maize starch (NMS) and waxy maize starch (WMS) during gelatinization process were studied. The results from SEM, X-ray diffraction (XRD), FTIR/solid state NMR spectroscopy and small angle X-ray scattering (SAXS) showed that NMS and WMS exhibited differently structural evolution behavior during gelatinization process. As the temperature increase, the proportion of the NMS granules with cavity gradually increased, while after heating beyond (peak gelatinization temperature (Tp) + conclusion gelatinization temperature (Tc))/2 the disappearance of starch granule integrity occurred for WMS.

In this study, soy protein isolate (SPI) was treated by modified atmosphere packaging (MAP) assisted dielectric barrier discharge (DBD) cold plasma (CP) to improve its functional properties. For this reason, SPI powders were treated with DBD-CP at the oxygen ratio of 20 %, 30 %, 40 %, 50 % and 60 %, respectively.
