Metabolic-associated fatty liver disease (MAFLD) is becoming the key factor in causing chronic liver disease all over the world. Sulforaphane (SFN) has been proven to be effective in alleviating many metabolic diseases, such as obesity and type 2 diabetes. In this study, C57BL/6 mice were fed a high-fat diet for 12 weeks to induce MAFLD and given SFN (10 mg per kg bw) daily.

Multiple adulteration is a commonly used fraud of illegal traders to mask the traditional adulteration detection methods. In this study, rapid detection of multiple adulteration of sesame oil was proposed using a portable Raman spectrometer. Two strategies including simplex theory of mixtures and D-optimal mixture design were used to conduct variable selection and model evaluation, respectively.

Epidemiological evidence showed that patients suffering from obesity and T2DM are significantly at higher risk for chronic low-grade inflammation, oxidative stress, nonalcoholic fatty liver (NAFLD) and intestinal flora imbalance. Increasing evidence of pathological characteristics illustrates that some common signaling pathways participate in the occurrence, progression, treatment, and prevention of obesity and T2DM. These signaling pathways contain the pivotal players in glucose and lipid metabolism, e.

Ulcerative colitis (UC) is becoming an increasingly serious health problem. This study aimed to investigate the effect of a newly isolated species that produces feruloyl esterase (FAEb) on dextran sodium sulfate (DSS)-induced UC in mice. In this study, FAEb supplementation slowed body weight loss and mitigated colon length shortening, the severity of fecal occult blood, and increases in the disease activity index (DAI) in UC model mice.

The colorimetric sensor array real-time monitoring system with multivariate analysis was established for discrimination of potato varieties with different types and degrees of corruption. The characteristic volatile compounds of fresh, dry rot and soft rot potatoes was identified by Gas Chromatography-Mass Spectrometry and the 3 × 4 array was fabricated to capture the characteristics volatile compounds. The sensor array system produced a visible color difference map upon its exposure to volatile compounds of potato.

Pregelatinized starch (PGS) is often used to improve the processing quality of foodstuffs, but little attention has been paid to the effects of different reheating methods and degree of starch gelatinization (DSG) on their rheological and textural properties. In this study, pregelatinized rice starches (RS) with gelatinization degrees ranging from 58% to 100% were prepared via different Rapid Visco Analyser (RVA) heating procedures and reheated in various methods, including high-power microwave (HM), low-power microwave (LM), and water bath. The rheological behavior and textural properties were explored, and the results demonstrated that the consistency, gel strength, hardness, and springiness of PGS in all tested samples decreased significantly after reheating.

Determining the different surfaces of oxide nanocrystals is key in developing structure-property relations. In many cases, only surface geometry is considered while ignoring the influence of surroundings, such as ubiquitous water on the surface. Here we apply O solid-state NMR spectroscopy to explore the facet differences of morphology-controlled ceria nanocrystals considering both geometry and water adsorption.

Lung adenocarcinoma (LUAD) is one of the most aggressive and lethal tumor types and requires effective diagnostic and therapeutic targets. Though the epidermal growth factor receptor (EGFR) is an important target for LUAD therapy, acquired resistance is still inevitable. In recent years, the regulation of the EGFR by competing endogenous RNAs (ceRNAs) has been extensively studied and significant progress has been made.

Layered double oxides (LDOs) can restore the parent layered double hydroxides (LDHs) structure under hydrous conditions, and this "memory effect" plays a critical role in the applications of LDHs, yet the detailed mechanism is still under debate. Here, we apply a strategy based on ex situ and in situ solid-state NMR spectroscopy to monitor the Mg/Al-LDO structure changes during recovery at the atomic scale. Despite the common belief that aqueous solution is required, we discover that the structure recovery can occur in a virtually solid-state process.

Unlabelled: By using a mimicked heating with ex-situ liquid nitrogen flash freezing method, multi-scale structural evolution behaviors of normal maize starch (NMS) and waxy maize starch (WMS) during gelatinization process were studied. The results from SEM, X-ray diffraction (XRD), FTIR/solid state NMR spectroscopy and small angle X-ray scattering (SAXS) showed that NMS and WMS exhibited differently structural evolution behavior during gelatinization process. As the temperature increase, the proportion of the NMS granules with cavity gradually increased, while after heating beyond (peak gelatinization temperature (Tp) + conclusion gelatinization temperature (Tc))/2 the disappearance of starch granule integrity occurred for WMS.

Resistance of Tribolium castaneum to phosphine is related to point mutations in DNA code corresponding to amino acid changes associated with a core metabolic enzyme dihydrolipoamide dehydrogenase (DLD), but the mutation patterns vary among different resistant populations. Thus, there is a great need to develop a cost-effective method to detect core mutations in T. castaneum, which would be the key factor to understand the molecular basis of phosphine resistance.

The present study was performed to evaluate the effect of crop rotation on mycotoxins and species in cereals in Sichuan Province. A total of 311 cereal samples were randomly collected and analyzed from 2018 to 2019 in Sichuan Province. The results of mycotoxin analysis showed that the major trichothecene mycotoxins in Sichuan Province were nivalenol (NIV) and deoxynivalenol (DON), and the mean concentration of total trichothecenes (including NIV, fusarenone X [4ANIV], DON, 3-acetyldeoxynivalenol [3ADON], and 15-acetyldeoxynivalenol [15ADON]) in wheat was significantly higher than that in maize and rice.

Meat is the main source of protein nutrition for humans. However, given the increasing population and environmental pressure, a shortage of meat is expected in the future. The preparation of plant-based (meat) products using existing processing methods represents a breakthrough to solve the shortage of traditional animal meat in the future, and texture is a key issue determining whether plant-based (meat) products can replace traditional animal meat.

In this study, soy protein isolate (SPI) was treated by modified atmosphere packaging (MAP) assisted dielectric barrier discharge (DBD) cold plasma (CP) to improve its functional properties. For this reason, SPI powders were treated with DBD-CP at the oxygen ratio of 20 %, 30 %, 40 %, 50 % and 60 %, respectively. The results showed that with the increase of oxygen content, the structure of SPI was destroyed, protein macromolecule depolymerized.
