This study comprehensively investigated DHA algal oil emulsions and microcapsules prepared with different egg yolk hydrolysates (DHYP). Dual-enzyme (phospholipase A1 and protease) treatment enhanced emulsion stability by boosting protein adsorption, reducing particle size, and increasing zeta potential. For microcapsules, EF-DUAL, treated with dual-enzymes, had improved solubility, dispersibility, and wall material compactness, effectively protecting DHA from oxidation.

To accurately and reliably distinguish different varieties of Citri Reticulatae Pericarpium (CRP), we propose a novel classification strategy combining polysaccharide fingerprinting and machine learning (ML). This study evaluated the in vitro antioxidant activity and bioactive compound content of mixed-strain lactic acid bacteria-fermented black mulberry juice (FBMJ) and its protective effects against oxidative stress using physicochemical experiments and a cellular oxidative stress model. We also performed preliminary analyses of polysaccharide structures in FBMJ and identified the dynamic changes in the phenolic profiles of FBMJ during the fermentation process. The results indicated that FBMJ polyphenols can improve cell vitality and prevent HO-induced oxidative stress by reducing intracellular reactive oxygen species concentrations and regulating mitochondrial membrane potential.

The objective of this work was to investigate the effect of synthetic thiol-modified hyaluronic acid (HASH) on the gelation properties of ginkgo seed protein isolate (GSPI) under non-oxidizing (NOX) or oxidizing (OX) conditions. Under NOX conditions, HASH mediated the disruption of disulfide bonds, leading to a dose-dependent dissociation of GSPI. Conversely, in OX conditions, hydroxyl radical-induced oxidation facilitated the formation of interprotein disulfide bonds.

To investigate the influence of the position and quantity of thiophene or acetylene groups on the photoelectric properties of dye-sensitized solar cells (DSSCs), density functional theory (DFT) were employed to simulate five zinc porphyrin dye molecules (T-3, T-3-D, T-3-A, T-3-AD, and T-3-ace). The optimized geometry indicated that T-3-ace possessed superior planar properties, attributed to incorporating the acetylene groups, facilitating the charge transfer process. The lower lowest unoccupied molecular orbital (LUMO) energy levels of T-3-ace and T-3-D suggested that introducing thiophene or acetylene groups on the donor side enhanced the electron absorption capability of the dyes.

In this paper, we designed and synthesized a novel based on quinoline modification half-salamo-type Zn(II) complex([Zn(L)(μ-OCH)]·(ClO)), namely ZP. The structure of ZP was determined by X-ray single-crystal diffraction, in which the Zn(II) ions displayed in two different coordination modes, ultimately forming a highly symmetric heptanuclear structure. The Zn(II) complex probe modified by quinoline luminescent group has excellent luminescence properties and selectively recognizes Fe in aqueous solution.

A new colorimetric fluorescent sensor QPEBT was developed by merging the N,N-di(2-picolyl)ethane-1,2-diamine and 2,2'-bithiophene moieties into the quinolimide backbone. QPEBT could sensitively detect Zn through the remarkable fluorescence enhancement with distinct color changes from light orange to pink in visible light and from ginger to orange-yellow in 365 nm UV irradiation. The 1:1 stoichiometry between QPEBT and Zn was verified by the spectra titrations, Job's and HRMS analyses, and theoretical calculations.
