Under specific pretreatment or processing conditions, spheroprotein can be transformed into a molten globule state, a typical protein conformation with enhanced functionality. Analyzing the correlation between the formation of molten-globule structures and their quality and functional characteristics is critical for developing tailored processing features, especially for minimally processed future foods. This review outlines the mechanisms driving the formation of molten globule proteins through various processes including ultra-high pressure pretreatments, heating, ultrasonication, pH-shifting, macromolecular crowding and exposure to small-molecule denaturants.

School of Food Science and Bioengineering, Changsha University of Science and Technology, Changsha 410114, China. Electronic address:

The processing quality of indica rice stabilizes after a period of post-harvest storage known as after-ripening, during which proteins play an important role according to our previous research. The present study investigated the effects of rice storage proteins (RSPs) on the physicochemical properties of after-ripening rice, employing protein analysis, rapid viscosity analyzer, hydration properties assessment, morphological analysis and fourier transform infrared spectroscopy (FTIR). The results indicated that the crude protein content remained relatively unchanged during after-ripening, while the band intensities of 13 kDa and 20 kDa protein subunits increased with increasing storage time.

Here we report a strategy that eliminates the need for photocatalysts and external additives, which provides an operable and mild method for halogen radical-enabled dearomatization of -arylpropiolamides under an oxygen atmosphere at room temperature. The method is applicable to a wide range of substrates, extending beyond the limited scope of -methoxyl -phenylpropynamides. Furthermore, several functional synthetic intermediates and anticancer bioactive molecules were successfully derived from 3-halogenated azaspiro[4.

With the wide application of the incremental launching method in bridges, the demand for real-time monitoring of launching displacement during bridge incremental launching construction has emerged. In this paper, we propose a machine vision-based real-time monitoring method for the forward displacement and lateral offset of bridge incremental launching in which the linear shape of the bottom surface of the girder is a straight line. The method designs a kind of cross target, and realizes efficient detection, recognition, and tracking of multiple targets during the dynamic process of beam incremental launching by training a YOLOv5 target detection model and a DeepSORT multi-target tracking model.

December 2024

Key Laboratory of Animal Protein Food Processing Technology of Zhejiang Province, Zhejiang-Malaysia Joint Research Laboratory for Agricultural Product Processing and Nutrition, College of Food Science and Technology, Ningbo University, Ningbo 315211, China. Electronic address:

This study examined the impact of pre-acidification induction on the quality attributes and flavor retention of ready-to-cook (RTC) goose meat products. The results demonstrated that pre-acidification could influence the eating qualities of RTC goose meat by effectively regulating the physicochemical properties of goose myofibrillar proteins (MP) including solubility and water-holding capacity. Elevated carbonyl contents indicated an enhanced gel-forming capacity in RTC goose meat during storage, accompanied with reduced total sulfhydryl contents from enhanced protonation pretreatment and augmented lipid oxidation.

  • NiFe layered double hydroxide (NiFe LDH) is a promising electrocatalyst for the oxygen evolution reaction (OER) but has stability issues due to poor NiFe interactions.
  • Researchers developed a NiFe hydroxide-organic framework (NiFe HOF) that enhances these interactions by modifying NiFe LDH with an organic linker, allowing for better structural flexibility.
  • As a result, NiFe HOF shows a significantly lower overpotential and remarkable stability during electrolysis, lasting over 1050 hours with minimal performance loss.

November 2024

Changsha University of Science and Technology, School of Transportation and Traffic Engineering, No.960, Section 2, Wanjiali South Road, Tianxin District, Changsha, Hunan Province, China.

Under the dual regulation of government intervention and environmental constraints, user demand, low-carbon awareness, and the willingness of construction enterprise to reduce carbon emissions are crucial to the realization of low-carbon transportation infrastructure construction. Basing on prospect theory, this paper constructs an evolutionary game model for the government, construction enterprise, and user, explores the stabilization of the three-game players' strategy choices, and discusses the influence of key parameters on the behavior evolution of relevant players through simulation analysis. The results indicate that: the regulatory cost when the government adopts incentives or no incentives is an important factor affecting the strategy choice.

In this study, the relationship between advanced glycosylation end products (AGEs) in preserved egg white (PEW) with protein oxidation and precursors induced by OH and Cu were performed to clarify the differential contribution of OH and Cu on the formation of AGEs during pickling. It was found that AGEs were more easily formed in PEW rather than yolk, and the accumulation of N-carboxymethyllysine (CML) could be promoted through protein oxidation related to carbonyl compounds, tryptophan induced by Cu at early stage, while carbonyl compounds were more conducive to form N-carboxyethyllysine (CEL) under synergistic action of Cu and OH. At later period, Schiff base promoted the formation of CEL and CML in the presence of Cu.

Foam materials possess notable features, including low density, high porosity, low thermal conductivity, and high impact resistance, making them extensively used in various sectors such as construction, transportation, water treatment, and packaging. However, the majority of commercial foam materials are derived from synthetic polymers based on fossil fuels, which raises concerns regarding health and ecology. In this work, we present a straightforward and scalable approach (physical cross-linking and common pressure drying) for fabricating a bio-based foam material using pulp fibers sourced from discarded sugarcane bagasse and sodium alginate extracted from seaweed.

With Ce@g-CN as a heterogeneous semiconductor photocatalyst, BuNCl as both a redox catalyst and a hydrogen atom transfer catalyst, the first example of semiheterogeneous photocatalytic cross-dehydrogenative coupling of -heteroarenes and alkanes/ethers with H evolution was developed. Both a diverse array of high-value alkylated -heteroarenes and clean H can be efficiently coproduced under sacrificial reagent- and chemical oxidant/reductant-free conditions. Combining both the reversible Ce/Ce redox pair and the reversible Cl̅/Cl ̇ redox pair can considerably improve the photocatalytic efficiency.

The Five-hundred-meter Aperture Spherical Telescope (FAST), as the world's most sensitive single-dish radio telescope, necessitates highly accurate positioning of its feed cabin to utilize its full observational potential. Traditional positioning methods that rely on GNSS and IMU, integrated with TS devices, but the GNSS and TS devices are vulnerable to other signal and environmental disruptions, which can significantly diminish position accuracy and even cause observation to stop. To address these challenges, this study introduces a novel time-series prediction model that integrates Long Short-Term Memory (LSTM) networks with a Self-Attention mechanism.

How to improve the success rate of autonomous underwater vehicle (AUV) path planning and reduce travel time as much as possible is a very challenging and crucial problem in the practical applications of AUV in the complex ocean current environment. Traditional reinforcement learning algorithms lack exploration of the environment, and the strategies learned by the agent may not generalize well to other different environments. To address these challenges, we propose a novel AUV path planning algorithm named the Noisy Dueling Double Deep Q-Network (ND3QN) algorithm by modifying the reward function and introducing a noisy network, which generalizes the traditional D3QN algorithm.
