Overweight and obesity are considered the greatest public health problem in this emerging country, which worldwide has the second-highest percentage of overweight people among its population. The objective of this work was to analyse to what extent factors traditionally used in the study of overweight and obesity (such as sociodemographic and behavioural) and new variables proposed in the literature (such as stress, financial stress and emotional support) explain this disease in the adult population of Chile. Data were obtained from the III National Health Survey (ENS) administered by the Ministry of Health of Chile in 2017.

In December 2017 the Venetian Region (local Authority), financed the creation of the Operational Group (OG) 'Serinnovation', within the framework of the Rural Development Plan supported by the European Community. The OG aims at coordinating and spreading innovation in sericulture through mechanisation of processes and centralisation of some rearing steps, the use of waste as by-products and traceability to promote local productions. The project acts on perceived quality by increasing the added value, through production cost efficiency, and on the recovery of the waste material for further applications (circular economy).

To fulfill consumer trends in sustainable and healthy food choices, this study explored the application of edible insects and carob powder as sustainable and nutritious ingredients in developing a high-protein snack, known as a protein ball. Four formulations were developed and characterized in terms of moisture content, water activity, color, texture, microbial count, and nutritional profile. Finally, the sensory profile was determined using the flash profile method, and the developed product was compared to a commercial product.

The growing demand for sustainable ruminant feed alternatives has motivated the application of bioconversion approaches for the valorization of agro-food byproducts (AFB) into feed additives and supplements. The present study thoroughly investigated substituting volatile fatty acids (VFAs) obtained from acidogenic fermentation (AF) of AFB as an energy source in ruminant feed. Rumen in vitro digestibility assays were conducted utilizing the gas production method, wherein the VFAs obtained from AF of apple pomace and potato protein liquor was substituted with partial silage and concentrate energy at levels of 10%, 20%, and 30%.

"Pecorino" is a typical semi-hard cheese obtained with raw or heat-treated sheep milk using procedures to valorize the raw material's chemical and microbiological properties. In the present study, using a high-throughput method of 16S rRNA gene sequencing, we assessed the evolution of the microbiome composition from milk to Pecorino-like cheese in artisanal processes using milk from Comisana and Lacaune sheep breeds. The comparative analysis of the bacterial community composition revealed significant differences in the presence and abundance of specific taxa in the milk microbiomes of the Comisana and Lacaune breeds.

This study determined consumers' attitudes towards physical and mental wellness related to red meat consumption and their willingness to pay (WTP) more for the meat. In 2019, two online surveys of red meat eaters were conducted in the USA (n = 1000) and Australia (n = 523) using commercial platforms. Results showed that over 90% of respondents indicated interest in purchasing red meat to improve their wellness status.
