This study investigates the optimization of four gluten free flours namely sorghum, rice, teff flours, and 3% flaxseed flour blends to enhance the quality , which was traditionally baked with only pure teff. During the synthesis, an assessment of ionic conductivity was carried out, revealing a significant increase in conductivity prior to the introduction of the reducing agent, followed by a sharp decrease upon its addition. Characterization of the ZnO NPs involved ultraviolet-visible spectroscopy, scanning electron microscopy, Fourier-transform infrared spectroscopy, and, X-ray diffraction analysis.

Undernutrition is continued to be significant public health problem worldwide. The extra calories and nutrients required to support breastfeeding make lactating mothers at higher risk of malnutrition than general population. Undernourished lactating mothers have also been found to influence both the quantity and quality of breast milk and then the nutritional and health status of their offspring.
