Summary: With the recent advancement in single-cell RNA-sequencing technologies and the increased availability of integrative tools, challenges arise in easy and fast access to large collections of cell atlas. The aging population is stimulating increased demand for dysphagia-oriented foods, yet most current options are made of ultra-processed macronutrients and lack high-quality protein and ω-3 fatty acids. This study explores the use of whole salmon fillets as a myofibrillar protein source to stabilize salmon backbone oil, creating ω-3-rich emulsion gels (50-60 vol%) for dysphasia individuals. Two-step high-pressure homogenization (HPH; 50 MPa) improved emulsion texture, storage stability, and swallowability (IDDSI level 4) by reducing oil droplet size (from 20 to 2 μm) and increasing elastic modulus by 6-8 times and viscosity by more than 10 times.

Oxidation of the sub-arc mantle driven by slab-derived fluids has been hypothesized to contribute to the formation of gold deposits in magmatic arc environments that host the majority of metal resources on Earth. However, the mechanism by which the infiltration of slab-derived fluids into the mantle wedge changes its oxidation state and affects Au enrichment remains poorly understood. Here, we present the results of a numerical model that demonstrates that slab-derived fluids introduce large amounts of sulfate (S) into the overlying mantle wedge that increase its oxygen fugacity by up to 3 to 4 log units relative to the pristine mantle.

Background: Niemann-Pick Disease Type C (NPC) is an ultra-rare disorder characterized by progressive psychiatric and neurologic manifestations, with late infantile, juvenile, and adolescent/adult presentations. We examined morphological properties of the choroid plexus, a protective blood-cerebrospinal fluid barrier, in NPC, and their relationship with neurodegeneration, clinical status, and circulatory markers. This study also determined whether choroid plexus morphology differentiates between NPC and more prevalent illnesses, schizophrenia (SZ) and bipolar disorder (BD), which have overlapping psychiatric symptoms with adolescent and adult-onset NPC and are associated with misdiagnosis.

Introducing stable gas bubbles in liquid is important for the industrial synthesis of chemicals and intermediates via multiphase reactions because of limited solubility of gaseous reactants such as H and O. Herein, a bubble-stabilized system is constructed via in-situ nucleation of bubbles at the surfaces of various polymer nanofibers that circumvents the repulsive interactions between gas-liquid interfaces and nanofibers. During bubble growth processes, nanofibers are self-assembled and interwoven to build spatial nanofiber network surrounding bubbles, firmly trapping bubbles in the liquid phase.
