This study investigated the effects of Chlamydomonas reinhardtii polysaccharides (CRPs) on retarding the retrogradation of japonica rice starch (JS) and glutinous rice starch (GS). Structure characterization revealed that CRPs, with an average molecular weight of 505 kDa, mainly consisted of glucose, mannose, and galactose and featured a triple-helix structure. CRPs could reduce the storage modulus increment of JS during the cooling process by interacting with amylose, thereby inhibiting gel network formation.

Antimicrobial resistance (AMR) in Escherichia coli strains, particularly those producing Extended-Spectrum Beta-Lactamase (ESBL) and Carbapenemase (CR-Ec), represents a serious global health threat. These resistant strains have been associated with increased morbidity, mortality, and healthcare costs, as they limit the effectiveness of standard antibiotic therapies. The prevalence of ESBL- and CR-Ec-producing strains continues to rise, driven by the overuse and misuse of antibiotics in healthcare and agricultural settings, and facilitated by global interconnectedness through international travel, trade, and food distribution.

A comprehensive understanding of cadmium (Cd) migration in soils near contaminated hotspots is crucial for optimizing remediation efforts and ensuring crop health. This study investigates agricultural soils from four sites in mining and sewage-irrigation areas, assessing the impact of inorganic and organic fertilizer application on soil Cd remobilization. 3-methyl-4-nitrophenol (PNMC), a chemical prevalent in various industries for drug, dye, and leather production, also serves as a primary byproduct of organophosphate insecticides. Despite its global recognition as an endocrine disruptor with documented reproductive toxicity, its detrimental impact on preimplantation embryonic development has yet to be thoroughly investigated. This study introduces an innovative electrochemical biosensor, engineered through the functionalization screen-printed electrode (SPE) with a coordination complex comprised of 4-mercaptobenzoic acid (4-MBA) and copper ions (Cu), achieving precise quantitative determination of glyphosate. Electrodepositing gold nanoparticles (AuNPs) onto the electrode surface, forming a self-assembled monolayer (SAM) of 4-MBA via thiol-gold interactions, and immobilizing Cu via coordination bonding with the monolayer, finalizing the electrochemical biosensor construction as Cu/4-MBA/AuNPs/SPE. The successful modification of the biosensor interface is confirmed through scanning electron microscopy (SEM), energy-dispersive X-ray spectroscopy (EDX), and electrochemical characterization.

Herein, we developed multifunctional hydrogels formed between soybean protein (SPI)-gallic acid conjugate and oxidized dextran (ODex) via a Schiff base reaction. The effects of ODex on the morphology, structure, and functional properties of the hydrogels were elucidated. Consumption of contaminated wines is a significant source of ochratoxin A (OTA) intake in humans, yet existing techniques for OTA removal are inadequate. This study constructs a TiO/SiO/g-CN catalyst (TiSiMs-TCN) with a tubular structure, capable of efficiently removing OTA from both simulated and real wines under visible light irradiation. The results of experiments, characterizations, and theoretical calculations demonstrate that the incorporation of silica enhances the adsorption capacity for OTA, and the tubular structure improves the catalyst's photoelectric properties.

We hypothesized that improving the fat globule structure of infant formulae based on the milk fat globule membrane (MFGM) would regulate metabolites and metabolic pathways, making it more similar to the metabolic properties of human milk. Therefore, we prepared infant formulae with different fat globule structures, including two model infant formulae (F1: fat globules surrounded by MFGM; F2: fat globules surrounded by protein) and one commercial infant formulae containing MFGM, and compared their metabolic differences with those of human milk. The number of differential metabolites between each sample and human milk reached 60 (F1), 132 (F2) and 126 (IF1).

The volatile markers and aroma properties of unifloral safflower honey in Xinjiang, China were identified for the authentication. An untargeted metabolomics analysis was performed to compare the volatile components in safflower honey with those in four other unifloral honey and the nectar plants of safflower honey through headspace solid-phase microextraction-chromatography-mass spectrometry. Thirteen elements were measured in 76 surface grab sediment samples and 90 segments of four cores from Lakes Erie and Ontario. By combining the data obtained previously from Lakes Superior, Michigan, and Huron, the spatial distribution, temporal trends, major influencing factors, anthropogenic enrichments, categorization, and ecological risks of target metals in sediment were evaluated for the Great Lakes region. Regionwide, Lake Ontario had the highest median concentrations for Ag, As, Cd, Zn, and Pb, while the highest Cr concentration was found in the Western Basin of Lake Erie.
