In this study, the effects of different cooking processes on the phytochemical profile and mineral content of garlic (Allium sativum L.) were determined. Different cooking processes had a significant effect on the moisture, pH, water-soluble solids, L*, a*, b*, C* and °h values.

Determination of 16 European Priority Polycyclic Aromatic Hydrocarbons in Doner Kebab Varieties Cooked Under Different Heating Sources.

Doner kebab is a traditional Turkish meat product produced from lamb, beef or poultry meat seasoned with a blend of spices such as salt, black pepper, cumin, thyme and/or sauces. The aim of this study was to determine 16 EU priority polycyclic aromatic hydrocarbons (PAHs) in doner kebabs cooked under four different heating sources (electricity, open gas, wood and charcoal grilling). For this purpose, 200 meat doner and 200 chicken doner kebab samples were obtained randomly from various buffets and restaurants located in Istanbul and analyzed by means of GC-MS.

It was aimed to examine the antioxidant, phenolic profile, and volatile compound contents of seven different aromatic plant samples (broccoli, yarpuz, walnut leaves, marshmallow, wild clary, harmala, and common yarrow) collected from Adilcevaz district of Bitlis province in Türkiye. Gas chromatography-mass spectrometry (GC-MS) device was used for the volatile profile of the plant varieties. The most abundant volatile compounds were generally heptacosane compound that showed anticancer and antimicrobial effects.

Does the type of transportation mode matter in the effect of freight transportation on the environmental pollution of OECD countries?

This study aims forward to explain the effect of freight transportation on environmental pollution and to investigate the role played by the usage rates of road and railway transportation modes in this relationship. As an auxiliary problem of the research, it was tried to determine whether there is a threshold value for these types of transportation and what consequences will arise in terms of environmental pollution below and above this threshold. For this purpose, the data of OECD countries for the period 2000-2018 were analyzed with the PSTR method.

Investigating the Mediating Role of Self-Compassion in the Relationship Between Authenticity and Alexithymia in University Students.

The aim of our study is to investigate the mediating role of self-compassion in the relationship between authenticity and alexithymia by examining the relationships between authenticity, alexithymia and self-compassion. The data collected via email by using three scales from the students of a foundation university in Istanbul/Turkey in the spring semester of 2022-2023. The data collection method was a descriptive cross-sectional study and the data were collected on a voluntary basis.

Distal radius fractures: What are the effects of ulnar styloid fracture and face-toface rehabilitation on the functional outcome?

Objective: This study aimed to investigate the effects of the accompanying ulnar styloid fracture and 2 different postoperative rehabilitation protocols on the final outcomes following surgical treatment of distal radius fractures.

Methods: In this retrospective study, 47 patients (11 male, 35 female; mean age=52.6 years, age range=24-85) who underwent plate fixation for distal radius fractures were divided into 4 groups based on the presence of an ulnar styloid fracture and type of rehabilitation.

In this study, the calcaneus and talus bones of 20 male and female adult Simmental and Angus cattle were used. The age and sex of these animals were recorded before slaughter, and carcass weights were taken after slaughter. Calcaneus and talus morphometric measurements were used to obtain multipliers that allow the estimation of the carcass weight.

Determination of Multimycotoxin in Cereal-Based Products Sold in Open-Air Markets.

In this study, a total of 140 cereal-based foods sold in temporary open-air markets were analyzed by LC-MS/MS for aflatoxin B, B, G, G, ochratoxin (OTA), zearalenone (ZEN), deoxynivalenol (DON), fumonisin B, fumonisin B, citrinin (CIT), HT-2, and T-2 toxins. Breakfast cereals (n:27), cornmeal (n:41), extruded maize (n:32), and oatmeal (n:40) purchased from these alternative shopping areas created to meet the food needs of low-income people in the suburbs formed the sample set of the study. These foods, which are sold in areas that are out of legal control and greatly affected by external environmental conditions, are more open to health risks.

Effect of Thermosonication on Amino Acids, Phenolic Compounds, Sensory Properties and Microbial Quality in Freshly Squeezed Verjuice.

Thermosonication is a process that can be used as an alternative to thermal pasteurization by combining mild temperature and ultrasound treatments. Objective: This study aimed to evaluate the effect of an increase in nuchal translucency (NT) thickness on the myocardial performance index (MPI) in fetuses without cardiac anomaly in the first trimester and to determine whether a difference in MPI between those with and without trisomy 21 in these fetuses could be determined.

Methods: The study group consisted of 53 pregnancies complicated with increased NT thickness without any associated structural anomalies. Forty-six gestational age-matched pregnant women whose fetuses had normal NT thickness were enrolled as the control group.
