A niche in the context of microorganisms defines the specific ecological role or habitat inhabited by microbial species within an ecosystem. For the human commensal Malassezia, the skin surface is considered its primary niche, where it adapts to the skin environment by utilising lipids as its main carbon and energy source. However pathogenic characteristics of Malassezia include the production of allergens, immune modulation and excessive lipid utilisation, which result in several diseases such as pityriasis versicolor, seborrheic dermatitis, Malassezia folliculitis and atopic dermatitis.

This review examines key journal articles on the isolation of chitin from mushroom biomass comparing these findings to those related to crustacean chitin. It highlights the need for standardizing chitin characterization, emphasizing that chitin comprises a family of polymers with variations in molecular weight (Mw), degree of acetylation (%DA), and acetylation patterns (P), leading to diverse physicochemical properties and biological activities. The review positions fungi and mushrooms as emerging sources of 'vegan' chitin, being non-animal and free from allergenic proteins.

The human body, as a highly complex ecosystem, harbors diverse microbial communities, with major factors triggering allergic reactions encompassing the skin microbiome and fungi. The global diversity of fungi is estimated to range from approximately 600 000 to 1 million species, and theoretically, IgE-mediated sensitization may occur to any fungal species. As of now, the World Health Organization/IUIS official database records 113 fungal allergens originating from 30 different fungi species, covering 42 allergen families.
