The adulteration of honey is a globally growing issue due to its medicinal benefits and health-promoting properties. This problem primarily involves the addition of sugars and other substances. To address these concerns, a comparative study was conducted to investigate the dielectric and spectroscopic properties of pure, sugar solution added honey, and commercially available honey.

To visualize the nonself recognition reaction in the cultivated mushroom Agaricus bisporus, we developed a method using the azo dye Evans blue. The use of Evans blue highlights dead mycelial sections, which are produced following nonself recognition in the interaction zone between two individuals. This method can differentiate between distinct heterokaryons, as well as between closely related heterokaryons constructed from siblings.

In this study, type-3 resistant starch (RS) with enhanced thermal stability and excellent short-chain fatty acid (SCFA) production was obtained through the butyrylation and subsequent recrystallization at 4 °C of high-amylose maize starch (HAMS). We comprehensively examined and contrasted the structural attributes and in vitro human fecal fermentation behavior of butyrylated RS (BRS) with varying degrees of substitution. Fourier-transform infrared analysis validated the successful integration of carbonyl groups into the starch matrix.

Bacterial cellulose (BC) holds significant commercial potential due to its unique structural and chemical properties, making it suitable for applications in electronics, medicine, and pharmaceuticals. However, large-scale BC production remains limited by challenges in bacterial performance. In this study, we compared 79 microbial genomes from three genera-Komagataeibacter, Novacetimonas, and Gluconacetobacter-to investigate their pangenomes, genetic diversity, and evolutionary relationships.
