The growth of Salmonella enteritidis PT4 in albumen around an intact yolk was governed by the age of the egg on inoculation. In the majority of eggs, held at 20 degrees C, the bacterium was unable to grow rapidly until eggs had been stored for approximately 3 weeks. The multiplication of S. enteritidis in stored eggs appeared to be associated with alterations to the yolk membrane which allowed the bacterium to either invade the yolk or obtain nutrients from it. The rate at which egg contents change to permit the growth of S. enteritidis would appear to be temperature related and took place more rapidly when eggs were stored under conditions where temperatures fluctuated and, on occasions, reached 30 degrees C.

This study aimed to compare the effects of dietary supplementation of bacteriophage (BP) and acidifiers on performance, meat quality, morphology, and intestinal microbiota in chickens challenged and unchallenged with Salmonella enteritidis (SE) and also to investigate the possibility of replacing them in the diet with antibiotics. A total of 1760 male Ross (308) chicks were randomly assigned to 11 dietary treatments (8 pens/with 20 male chickens in each). Due to an increased demand for natural food additives, clove oil was assessed as a natural alternative to chemical disinfectants in produce washing. This study assessed the antimicrobial activity of 5 and 10% (/) clove oil-amended wash liquid (CO) using a zone of inhibition (ZIB) test and determined the time required to completely inactivate pathogenic bacteria using bacterial death curve analysis. A washing experiment was used to evaluate CO's ability to inhibit bacterial growth on inoculated RTE spinach and in the wash water.
