Excessive anxiety regarding the potential for accidental and fatal cross-contamination is very common among patients and families with food allergy and contributes significantly to burden, reduced quality of life, and poorer management. In their landmark paper published nearly a decade ago, Dinakar and colleagues recommended that food allergists incorporate proximity food challenges such as smelling or touching an allergen into regular clinical practice to improve patient knowledge regarding safety and relative risk and reduce anxiety. Such proximity challenges are akin to the exposure tasks routinely employed to treat anxiety in cognitive-behavioral therapy (CBT), the first-line psychosocial intervention for anxiety disorders.

An increasing trend among food business operators (FBOs) to extend the shelf life of Ready-To-Eat (RTE) fish products over 5 days, the duration usually assigned to this kind of product, has been observed recently. In this study, three independent challenge tests (food artificial contamination) were performed on tuna fillet, marinated salmon tartare, and cubed salmon, with the aim of calculating the maximum growth rate (V) of and estimating the time required to reach the legal limit of 2 log CFU/g, as established by European Regulation 2073/2005. The pathogen counts were fitted by the model of Baranyi and Roberts to calculate the V, which were 0.

Microplastic (MP) contamination in marine environments is a growing concern; however, the selectivity of sampling nets can introduce significant biases in MP pollution monitoring and assessments, particularly for smaller MPs, leading to an underestimation of their presence and complicating data comparability across studies. This study addresses this challenge by developing a new selectivity model that accounts for the biases in assessments. Further, it provides a robust framework for correcting MP concentration data.
