Three groups of adult rats were fed black currant or olive oils or a 1:1 mixture of the two for three months. Feeding black currant oil diets, high in 18:2 (n-6), 18:3 (n-6), 18:3 (n-3), increased the heart and liver plasma membrane content of linoleic and arachidonic acid with a concomitant decrease of oleic acid. PUFA, n-3 and n-6 content and the bilayer lipid fluidity as examined by measuring the fluorescence anisotropy of diphenylhexatriene were not significantly affected. On the contrary, the 5'-nucleotidase of liver membrane of rats fed black currant diets was lower than that observed in membranes of liver from olive oil fed rats. Therefore it is concluded that PUFA and n-3/n-6 ratio as well as membrane fluidity do not influence the 5'-nucleotidase activity. It is suggested that the activity is sensitive to the amount of a specific fatty acid of the membrane (i.e., oleic or arachidonic acid) and/or to lipid supplementation which can influence the eicosanoids metabolism.

Phenolic compounds have antiglycation activity, but the changes occurring during thermal treatment (TT) in these activities are not completely understood. The effects of the extraction conditions of (poly)phenols from fruits, before and after TT, on their antioxidant and antiglycation effects were assessed. (Poly)phenol-enriched extracts (PEEs) from raw and TT (90 °C, 1 h) were extracted using three solvent mixtures (ethanol/water/acetic acid) with increasing water content (0, 24, and 49%) and three solvent-to-solid ratios (5, 10, and 20 mL/g).

In this study, biodegradable and active films based on sodium alginate incorporated with different concentrations of oils (25% and 50%) from fruit seeds were developed for potential applications in food packaging. The ultraviolet and visible (UV-VIS) spectra of raspberry seed oil (RSO) and black currant seed oil (BCSO) indicated differences in bioactive compounds, such as tocopherols, phenolic compounds, carotenoids, chlorophyll, and oxidative status (amounts of dienes, trienes, and tetraenes) of active components added to alginate films. The study encompassed the color, structure, and thermal stability analysis of sodium alginate films incorporated with RSO and BCSO and their mixtures.
