Lysozyme extracted from the egg-white of tortoise, the first example of a reptilian lysozyme to have been purified, has been crystallized and its tertiary structure determined at low resolution by X-ray analysis. This structure is shown to be closely homologous to that of hen egg-white lysozyme. The crystals of tortoise egg-white lysozyme contain a large proportion of liquid and the X-ray map shows that this forms large channels through the crystals into which the active sites of the enzyme molecules open. This indicates that tortois lysozyme crystals may be suitable for low-temperature studies of true enzyme substrate complexes.

Amyloid fibril formation of α-synuclein (αSN) is a hallmark of synucleinopathies. Although the previous studies have provided numerous insights into the molecular basis of αSN amyloid formation, it remains unclear how αSN self-assembles into amyloid fibrils in vivo. Here, we show that αSN amyloid formation is accelerated in the presence of two macromolecular crowders, polyethylene glycol (PEG) (MW: ~10,000) and dextran (DEX) (MW: ~500,000), with a maximum at approximately 7% (w/v) PEG and 7% (w/v) DEX.

A pH responsive composite film was developed by incorporating cyanidin (CY) and egg white lysozyme fibril into konjac glucomannan (KGM) and xanthan gum (XG) matrix to monitor the chicken breast freshness in this work. The physicochemical properties of the films, especially pH sensitivity, evaluated by color difference and visual color change under different pH values, were first explored. The freshness changes of chicken breast sealed with the composite films were also analyzed.
