derived extracellular vesicles (LAB-EVs) are nanosized particles secreted from during fermentation, and therefore exist universally in fermented foods such as yogurt, pickles, and fermented beverages. In this study, three LAB-EVs were prepared using a simple scalable method, and then their structures, compositions, and biosafety properties were characterized. The protective properties and potential mechanisms of action of the LAB-EVs against alcoholic liver disease were studied.

Background And Aims: The performance of non-invasive liver tests (NITs) is known to vary across settings and subgroups. We systematically evaluated whether the performance of three NITs in detecting advanced fibrosis in patients with metabolic dysfunction-associated steatotic liver disease (MASLD) varies with age, sex, body mass index (BMI), type 2 diabetes mellitus (T2DM) status or liver enzymes.
Methods: Data from 586 adult LITMUS Metacohort participants with histologically characterised MASLD were included.

This study successfully synthesised and characterised composites combining chitosan (CH), carboxymethyl cellulose (CMC), and various flavonoids (Fla). This innovative approach demonstrates the potential for developing functional materials with antioxidant and food preservation properties. The composites CH-Fla-CMC (1-5) was characterised using advanced techniques such as FT-IR, UV-Vis, XRD, SEM, TEM, and TGA, providing robust data on their structural, morphological, and thermal properties.

The genus (Lamiaceae family) comprises approximately 300 species, which are widely used in traditional medicine for their diaphoretic, antiseptic, hemostatic, and anti-inflammatory properties, but scarcely in official ones. Therefore, the study of holds promise for developing new medicinal products. In aqueous and aqueous-alcoholic soft extracts of the herb, 16 amino acids, 20 phenolics, and 10 volatile substances were identified by HPLC and GC/MS.

Background: Rapid socio-economic developments confront China with a rising consumption of ultra-processed foods (UPFs) and ultra-processed drinks (UPDs). This study aims to evaluate their potential impact on diet transformation towards sustainability including nutrition, environmental sustainability, and diet-related cost.
Methods: Dietary intake was assessed by 24 h recalls in 27,311 participants (age: 40.
