Due to their markedly distinct protein compositions and structures, goat milk and cow milk display substantially different characteristics. In this study, the quality and composition of goat milk and cow milk were studied after being refrigerated at 4 °C for 7 days, with a particular focus on protein oxidation and aggregation states. The results revealed that alongside increases in acidity, microbial colony count, and hydrolysis, there was a significant change in the protein aggregation state beginning on the second day.

Herbivorous livestock, such as cattle, sheep, goats, horses, and donkeys, play a crucial role in agricultural production and possess remarkable resilience to extreme environmental conditions, driven by complex genetic mechanisms. Recent advancements in high-throughput sequencing, genome assembly, and environmental data integration have enabled a deeper understanding of the genetic basis of their environmental adaptation. This review identifies key genes associated with high-altitude, heat, cold, and drought adaptation, providing insights into the molecular mechanisms underlying these traits.

Background: Cattle have evolved genetic adaptations to a diverse range of agroecological zones, such as plateaus and arid zones. However, little is known about its genetic basis of adaptation to harsh environments within a short period of time after domestication. Here, we analyzed whole-genome sequence data from three indigenous cattle breeds (Anxi, Qaidam and Zhangmu) in northwest China and five worldwide cattle breeds (Angus, Holstein, Jersey, Gir and N'Dama) to explore their genetic composition and identify selective sweeps in the Chinese cattle breeds.
