Observations of the reactivation rate and subsequent growth in addition to the luminescence of cells subjected to supercooling and freezing at 15 degrees C suggested that the effect of supercooling is more significant than that of freezing. In supercooled suspensions, cells are more injured than in frozen ones and the number of injured cells increases more rapidly. Unlike the supercooled cells, the live cells from frozen suspensions maintain a higher growth activity for a longer time.

Low-voltage electrostatic field (LP) enhances the freezing quality of food by increasing water supercooling and improving ice crystal morphology. This study explored the effects of LP treatment on the storage quality of square bamboo shoots using physicochemical, gas chromatography-mass spectrometry, and metabolomics methods. Results showed that with prolonged storage, the LP-treated group had lower activities of peroxidase, phenylalanine ammonia-lyase, and lower levels of malondialdehyde, cellulose, and lignin compared to the control group, while superoxide dismutase and catalase activities and shear force values were higher.

Environmental temperature impacts the physiological processes of reptiles, determines their hours of activity per day, and may constrain their ability to meet critical ecological requirements. When environmental temperatures reach freezing, a few lizard species exhibit two mechanisms (supercooling and freezing tolerance) to survive freezing, and these two processes depend on cryoprotective molecules, such as glucose. Organisms produce high glucose concentrations to reach lower than normal crystallisation points, and this blood glucose concentration can double after freezing.

Supercooling allows for retarding water crystallization toward negative Celsius temperatures. Previous findings of CO molecules shifting into bicarbonate species upon freezing, the latter which naturally adsorb on hydrophobic interfaces, are put in perspective here to interpret earlier published data. Since it has been shown that ice nucleation is unlikely on negatively charged surfaces, I propose that bicarbonates adsorb on most solid particles present in water that act as nucleators, thus retarding freezing and enhancing supercooling.
