Background: Incorporating β-carotene into food systems improves nutritional value by providing a natural source of vitamin A. However, maintaining its stability during processing and storage is a significant barrier for its bioavailability.

Results: This study investigated the utilization of banana rachis nanocellulose (BRNC) as a natural stabilizer in the formulation of Pickering nanoemulsion (PNE).

Unlabelled: Despite the remarkably high antioxidant activity of tocopherols, their applications in the food industry are limited because of their instability under various conditions. Complexes of α-tocopherol (α-TQ) or α-tocopheryl acetate (α-TQA) with β-cyclodextrin (β-CD) or starch were prepared and characterized by UV-vis, IR and thermal analysis. Oxidative stability of α-TQ and α-TQA against HO was 74.

(1) Background: The RoXsta system has been developed as a rapid, effective means of profiling different types of antioxidant activity. The purpose of this study was to examine its performance utilizing a diverse array of biological fluids including semen, blood plasma, serum, urine, saliva, follicular fluid and plant extracts. (2) Methods: The RoXsta system was used to assess the ability of different fluids to suppress free radical formation as well as scavenge a variety of toxic oxygen metabolites including free radicals and both hydrogen and organic peroxides.

Phytic Acid Delays the Senescence of Fruit by Regulating Antioxidant Capacity and the Ascorbate-Glutathione Cycle.

Int J Mol Sci

Engineering Research Center for Fruit Crops of Guizhou Province, Engineering Technology Research Centre for Rosa Roxburghii of National Forestry and Grassland Adminstratio, College of Agriculture, Guizhou University, Guiyang 550025, China.

fruit has a short postharvest shelf life, with rapid declines in quality and antioxidant capacity. This research assessed how phytic acid affects the antioxidant capacity and quality of fruit while in the postharvest storage period and reveals its potential mechanism of action. The findings suggested that phytic acid treatment inhibits the production of malondialdehyde (MDA) and enhances the activities and expressions of glutathione peroxidase (GPX), peroxidase (POD), catalase (CAT), and superoxide dismutase (SOD) while decreasing the generation of superoxide anions (O) and hydrogen peroxide (HO).

On-site visual quantification of alkaline phosphatase activity in cells using a smartphone-based approach.

Alkaline phosphatase (ALP) is a critical biomarker associated with various physiological and pathological processes, making its detection essential for disease diagnosis and biomedical research. In this study, we developed a novel, simple, and portable visual quantification method for ALP activity in cells using an efficient CuZnS nanomaterial with peroxidase-like properties, integrated into a smartphone-based platform for enhanced usability. The CuZnS nanomaterial catalyzes the breakdown of H₂O₂, generating ·OH radicals that oxidize the colorless substrate TMB into blue oxTMB, which is subsequently reduced back to TMB by ascorbic acid (AA).
