Glycation of ferritin provides a viable approach to enhance its physicochemical and functional properties. However, there is limited research on the interfacial adsorption properties of glycated ferritin-based colloidal particles. Therefore, this study selected recombinant human H-chain ferritin (rHuHF), rHuHF encapsulated with resveratrol (rHuHF-Res), and rHuHF-dextran glycoconjugates loaded with resveratrol (Dex-rHuHF-Res) as emulsifiers to investigate their interfacial adsorption properties.

Objectives: Extracorporeal circulation induces pronounced effects on haemostasis and rheology. To study these, an ex vivo simulation model is an attractive alternative but often requires large amounts of blood. We sought to create a miniaturized roller pump circuit requiring minimal amounts of blood and to test if the circuit could be used to compare coagulation, platelet function and blood rheology between a dextran-based and a crystalloid-based priming solution.

Riboflavin (vitamin B) is essential for human beings and it has to be provided by healthy nutrition. The use of fermentation with riboflavin-overproducing lactic acid bacteria (LAB) represents an ideal strategy to generate, by in situ biofortification, functional drinks. These beverages can positively contribute to consumer health and address nutritional deficiencies.

Peanut protein isolate (PPI) has high nutritional value, but its poor function limits its application in the food industry. In this study, peanut protein isolate was modified by enzymatic hydrolysis combined with glycation. The structure, emulsification and interface properties of peanut protein isolate hydrolysate (HPPI) and dextran (Dex) conjugate (HPPI-Dex) were studied.

The hyperglycemic pathophysiological environment in diabetic wounds is a major obstacle that impedes the healing process. Glucose-responsive wound healing materials are a promising approach to address this challenge. In this study, complex coacervate-based protocells are introduced for diabetic wound healing.
