The role of defatted hydrolyzed egg yolk powder in protecting DHA algal oil.

Food Chem

January 2025

State Key Laboratory of Food Science and Resources, Jiangnan University, Wuxi, Jiangsu 214122, PR China; School of Food Science and Technology, Jiangnan University, Wuxi, Jiangsu 214122, PR China. Electronic address:

This study comprehensively investigated DHA algal oil emulsions and microcapsules prepared with different egg yolk hydrolysates (DHYP). Dual-enzyme (phospholipase A1 and protease) treatment enhanced emulsion stability by boosting protein adsorption, reducing particle size, and increasing zeta potential. For microcapsules, EF-DUAL, treated with dual-enzymes, had improved solubility, dispersibility, and wall material compactness, effectively protecting DHA from oxidation.

Mosquitoes are responsible for the transmission of numerous pathogens, including Plasmodium parasites, arboviruses and filarial worms. They pose a significant risk to public health with over 200 million cases of malaria per annum and approximately 4 billion people at risk of arthropod-borne viruses (arboviruses). Mosquito populations are geographically expanding into temperate regions and their distribution is predicted to continue increasing.

The regulatory mechanisms for beef tenderization by the calcium-independent phospholipase A activity of Peroxiredoxin 6.

Food Chem

January 2025

Lab of Meat Processing and Quality Control, College of Food Science and Engineering, Shandong Agricultural University, Tai'an, Shandong 271018, PR China. Electronic address:

This study investigated the effect of the inhibition of the activity of Ca-independent Phospholipase A (iPLA) of Peroxiredoxin 6 (Prdx6) on beef tenderization in the early post-mortem period. Longissimus lumborum (LL) were incubated with or without the inhibitor of iPLA activity of Prdx6 (MJ33) for 1, 6, 12, 24, or 36 h, followed by incubation with or without the HO. iPLA activity, troponin T and desmin, Ca concentration, calpain-1, caspases, apoptosis rate, and cell morphology were examined.

Application of bacterioruberin from sp. isolated from Xinjiang desert to extend the shelf-life of fruits during postharvest storage.

Food Chem (Oxf)

June 2025

State Key Laboratory of Desert and Oasis Ecology, Key Laboratory of Ecological Safety and Sustainable Development in Arid Lands, Xinjiang Institute of Ecology and Geography, Chinese Academy of Sciences, Urumqi 830011, China.

Post-harvest losses and rapid fruit ripening at room temperature are major challenges in preserving fruit quality. This study aimed to reduce such losses by applying a red carotenoid pigment, bacterioruberin extracted from an sp. The carotenoid was characterized as bacterioruberin and its derivative tetra anhydrous bacterioruberin (λmax 490 nm), and an / value of 675 and 742 (M+ 1H).
