An elemental diet was used for long-term (up to 360 days) nutritional support in eight patients with Crohn's diesease. They had lost 30% (range 18-37%) of their weight in health. A whole-body monitor was used to measure total body potassium as an index of the lean tissue mass. Three preoperative patients who has been unable to maintain their weight on a normal diet were able to restore 10% per month of their lost lean tissue once they were established on an elemental diet. In five patients who had had a successful resection of their bowel lesion the postoperative rate of restoration of the lean tissue mass while taking an elemental diet was 18.5% per month, while in two control postoperative patients on a normal diet it was 19% per month.

Steam injection, especially in a superheated state, increases the rate of heat transfer and improves the quality of the baked products. In this research, different baking methods (forced convention, superheated steam, and superheated steam-assisted) at different temperatures (140°C, 160°C, 180°C) were applied to produce a new formulated rice cake containing acorn flour and inulin. The findings revealed that the level of moisture inside the oven directly influences the volume of the cake.

Background: Poor diet quality may contribute to undernutrition, particularly affecting young children from low-income households. Therefore, affordable and healthy local food-based recommendations (FBRs) are needed.
Objectives: This study aimed to (1) identify problem nutrient(s), (2) identify locally available nutrient-dense food sources that can provide adequate nutrients to meet the recommended dietary intakes of undernourished urban poor children aged 2-5 years, and (3) use linear programming to recommend a daily diet based on the current food patterns that achieves dietary adequacy and meets average food costs for these children.

The aim of this study was to investigate the mechanism of protein digestibility improvement by exploring the changes in structural characteristics of proteins in noodles with varying levels of mechanically activated starch. Therefore, different levels of mechanically activated wheat starch were mixed with refined wheat flour to produce noodles. Results showed that moderately mechanically activated starch could significantly improve protein digestibility and noodles containing 8.

This study evaluated the potential of starch (ST) and carrageenan (CRG) in packaging film formulation. CRG isolated from the seaweed (SW) was blended with starch and cast to obtain films whose moisture content (MC), total soluble matter (TSM), degree of solubility (DS), water vapor permeability (WVP), opacity (O), contact angles (CA), moisture absorption (MA), and percent elongation (PE) were evaluated.
