Highly Potent New Probiotic Strains from Traditional Turkish Fermented Foods.

Traditional Turkish fermented foods like boza, pickles, and tarhana are recognized for their nutritional and health benefits, yet the probiotic potential of lactic acid bacteria (LAB) strains isolated from them remains underexplored. Sixty-six LAB strains were isolated from fermented foods using bacterial morphology, Gram staining, and catalase activity. The isolates were differentiated at strain level by RAPD-PCR (Random Amplification of Polymorphic DNA-Polymerase Chain Reaction) and twenty-five strains were selected for further evaluation of acid and bile salt tolerance.

The thermodynamics of pressure-induced protein denaturation could so far not be directly compared with protein denaturation induced by temperature or chemical agents. Here, we provide a new cooperative model for pressure-induced protein denaturation that allows the quantitative comparison of all three denaturing processes based on their free energy, enthalpy, entropy, and cooperativity. As model proteins, we use apolipoprotein A-1 and lysozyme.

The aim of this study was to investigate the changes in the level of oxidative stress and lysozyme-like and phenoloxidase (PO) activity under the influence of nosemosis. Honeybees were kept in natural (apiary) and artificial (laboratory) conditions. In this study, it was shown for the first time that honeybees kept in apiaries have higher levels and activity of the studied parameters than honeybees kept in the laboratory.
