Synthetic conjugates of β-lactoglobulin and reducing sugar prepared by Maillard reaction acquire the capacity of inactivating haemolytic complement in human serum. The C-inactivating potential is related to the mean number of (lysine)-ε-amino-1-deoxy-2-ketose residues incorporated in the model compound. These findings are compared to results obtained by skin-testing similar artificial allergens in atopic subjects.

Importance: Menu labeling has been implemented in restaurants in some US jurisdictions as early as 2008, but the extent to which menu labeling is associated with calories purchased is unclear.
Objective: To estimate the association of menu labeling with calories and nutrients purchased and assess geographic variation in results.
Design, Setting, And Participants: A cohort study was conducted with a quasi-experimental design using actual transaction data from Taco Bell restaurants from calendar years 2007 to 2014 US restaurants with menu labeling matched to comparison restaurants using synthetic control methods.

The rising demand for natural antioxidants instead of synthetic materials, especially in biomedical applications, has led to increased interest in the search for bioactive compounds with potent antioxidant activity. In the present study, we tested the antioxidant effect of both a crude extract and an ethanol precipitate of Ulva rigida in HeLa cells exposed to hydrogen peroxide (H₂O₂). HeLa cells treated with H₂O₂ (1 mmol l⁻¹ for 3 h) exhibited significant damage to their morphology, a significant decrease in cell survival, and a remarkable leakage of lactate dehydrogenase (LDH).

The interaction of a synthetically prepared mutant peptide of hevein (a well known chitin-binding lectin) Hev32S19D with chitin oligosaccharides (and chitosan analogues) has allowed us to estimate their affinity constants and associated thermodynamic data. The mutant peptide is able to bind chitin oligomers, but with significant decreases in the association constants with chito-oligosaccharides. The determination of the three-dimensional structure of the peptide mutant, by using NMR, has permitted us to deduce that the topology of the backbone is very similar to that of the parent Hev32 peptide.
