In view of the threat to local breeds resulting from intensive animal production, many studies are conducted in search of arguments confirming their importance in food production. In the case of milk production, not only is its quantity important, but its quality is as well, including its chemical composition. Particular focus has recently been placed on the casein proteins beta-casein () and kappa-casein (), due to their potential impact on human health or on the suitability of milk for cheese production.

Cow's milk allergy (CMA) is the most common food allergy in infants. This study aimed to identify peptide biomarkers predictive of tolerance in a Spanish population of children with CMA. We investigated specific IgE and IgG4 binding to sequential epitopes of the five major CM allergens (α-s1-, α-s2-, β-, and κ-caseins as well as β-lactoglobulin) using a microarray-based immunoassay.

β-Casein is the main component of cow's milk protein, with A1 and A2 β-casein being the most common. Of these, A1 β-casein hydrolysate produces BCM-7, which can cause lactose intolerance, while A2 β-casein milk is more gentle on the gut. However, there is limited research on the composition of rumen microbiota, metabolites, and host metabolites in different genotype cows using metagenomics and metabolomics.

Herein, we report a sodium dodecyl-sulfate polyacrylamide gel electrophoresis (SDS-PAGE) method featuring dual imaging and signal-fusion deep learning for specific identification and analysis of glycomacropeptide (GMP) in milk sample. Conventional SDS-PAGE methods lack specificity because of the signle staining of protein bands, and the overlap between GMP and β-lactoglobulin (βLg). Our dual imaging method generated a pair of complementary detection signals by recruiting intrinsic fluorescence imaging (IFI) and silver staining.

In the last decades, the negative impact of petroleum derived materials on the environment is more and more evident; beyond the unavoidable reduction in the use of classical plastic, another promising approach is the development of alternative materials prepared starting from natural, biodegradable, and more sustainable biomolecules, particularly undervalued or discarded ones. Caseins are the most abundant proteins in milk, with important nutritional value but also interesting film-forming properties. Lignin is a polyphenolic polymer found in wood and derived from a by-product of the cellulose extraction processes; it is well known for its antibacterial, antioxidant, and UV-protecting properties.
