[Bacterial viruses in the Anthropocene era: friends or enemies of their hosts ?].

Bacterial viruses, or bacteriophages, are the most abundant viruses on Earth, and their hosts are the most widespread living organisms in the biosphere. They are found in a free state, as virions, but are also very abundant in bacterial genomes, as prophages. Bacteriophages are present in all biotopes colonized by bacteria, such as water, soils, extreme environments, human, animal, and plant microbiomes, where they contribute to genetic exchanges. Therefore, all factors affecting these environments have a major impact on the dynamics of bacterial populations and their viruses.

Chicken is an important food animal worldwide and plays an important role in human life by providing meat and eggs. Despite recent significant advances in gut microbiome studies, a comprehensive study of chicken gut bacterial, archaeal, and viral genomes remains unavailable. In this study, we constructed a chicken multi-kingdom microbiome catalog (CMKMC), including 18,201 bacterial, 225 archaeal, and 33,411 viral genomes, and annotated over 6,076,006 protein-coding genes by integrating 135 chicken gut metagenomes and publicly available metagenome-assembled genomes (MAGs) from ten countries.

The Clean Label concept has gained significant traction in the cheese industry due to consumer preferences for minimally processed cheeses free from synthetic additives. This review explores different approaches for applying Clean Label principles to the cheese industry while maintaining food safety, sensory quality, and shelf life. Non-thermal technologies, such as high-pressure processing (HPP), pulsed electric fields (PEF), ultra-violet (UV), and visible light (VL), are among the most promising methods that effectively control microbial growth while preserving the nutritional and functional properties of cheese.
