Powdered germinated Thai rice () is widely utilised as a dietary supplement to support health and prevent diseases. This study investigated the bioactive compound profile of water extracts from beverage powder made from Thai germinated brown rice (GBRE) and assessed its anticancer effects on cholangiocarcinoma, lung cancer, and liver cancer cell lines. Proton nuclear magnetic resonance (1H-NMR) revealed 23 metabolites, including amino acids, sugar, phenolic compounds and nitrogenous compounds.

Carotenoids, the bright yellow, orange, and red pigments of many fruits and vegetables, are essential components of the human diet as bioactive compounds not synthesized in animals. As a staple crop potato has the potential to deliver substantial amounts of these nutraceuticals despite their lower concentration in tubers compared to edible organs of other plant species. In this work, extracts from the pulp, peel, and seed of were obtained via lyophilization and oven drying. Bromatological analyses were performed to investigate variabilities in the nutritional content of fruits after nine post-harvest days. Meat lipids are determinants of the nutritional, sensory and physiological qualities of meat, encompassing triglycerides, phospholipids, cholesterol and bioactive compounds. These lipids provide essential fatty acids, including omega-3 and omega-6 polyunsaturated fatty acids, critical for metabolic regulation, inflammation control and cognitive health.
